About the role

Premier Group Stores manages seven convenience retail sites across Edinburgh and the Lothians. We are looking for a commercially focused E-commerce & Delivery Operations Manager to take ownership of online sales and delivery operations across the group stores.

The successful candidate will manage and grow profitable online sales through Deliveroo, Just Eat, Uber Eats and Scoot while overseeing driver teams and supporting store colleagues. This is a hands-on, multi-site role combining e-commerce, local marketing, operational management and last-mile delivery.

Key responsibilities

Manage sales performance across all online delivery platforms.

Maintain product catalogues, prices, photographs, promotions, availability and opening hours.

Increase profitable sales, average order value and repeat business.

Analyse platform commissions, promotional costs, refunds and delivery expenses.

Identify underperforming stores, products and campaigns and take corrective action.

Recruit, train, schedule and manage delivery drivers.

Ensure reliable driver coverage during evenings, weekends and peak trading periods.

Monitor delivery times, driver productivity, cost per delivery and customer feedback.

Create and maintain clear procedures for accepting, picking, packing, dispatching and delivering orders.

Work with store teams to improve stock availability, order accuracy and preparation times.

Reduce cancellations, refunds, late deliveries, missing items and customer complaints.

Visit and support all seven locations across Edinburgh and the Lothians.

Manage local digital marketing and work with delivery platforms and suppliers on promotional activity.

Produce weekly reports covering sales, profitability, order performance, customer ratings, driver costs and marketing results.

Ensure operations comply with right-to-work, insurance, health and safety, data protection and age-restricted-sales requirements.

About you

Experience in e-commerce, online grocery, food delivery, convenience retail, multi-site operations or last-mile delivery.

A proven record of increasing online sales or improving operational performance.

Experience recruiting, supervising or scheduling drivers or operational teams.

Commercial understanding of margins, commissions, promotions and profitability.

Confidence using spreadsheets, sales reports and online platform dashboards.

Strong leadership, communication, organisation and problem-solving skills.

Ability to work independently and take ownership of results.

Full UK driving licence and ability to travel regularly between the seven stores.

Flexibility to support evening and weekend peak periods when required.

Direct experience with Deliveroo, Just Eat, Uber Eats or Scoot is desirable. A university degree is not essential; relevant experience, commercial ability and measurable results are more important.

Salary of £32,000–£36,000 per year, depending on experience.

Performance-related bonus.
