Job Summary
We are seeking an experienced and dynamic Restaurant Manager to help oversee the daily operations in our beautiful beachside restaurant overlooking Gylly Beach. The ideal candidate will possess strong leadership skills, extensive restaurant experience, and a passion for delivering exceptional customer service. This role involves supervising staff, managing food safety standards, and ensuring the smooth running of all restaurant functions to provide an outstanding dining experience for our guests.
Duties & Responsibilities
Leadership, customer experience and team training
- Have a real passion for operational excellence, deliver well considered spaces for our customers, considering lighting, music, cleanliness, temperature and staff appearance etc.
- Lead from the front delivering exceptional customer experiences through fantastic service, upselling, actioning feedback, staff coaching and having awareness of the needs of customers.
- Act as part of the management team and assume responsibility for the business in the GM’s and Deputy GM absence (Café and Beach operations).
- Own staff inductions and training. Ensuring from day 1 that all team members understand their role within Gylly and the standards we work too.
- Lead shifts day to day, addressing any team issues, customer complaints or problems as they arise, swiftly and in a professional manner. Carry out briefings on todays specials with wine recommendation, ‘out of stocks’ and any specials requirements for the day.
- Build great rapport and relationships with the kitchen team, and wider business, including other hospitality managers, marketing, finance, HR etc. Live and breathe our company values.
Food and drink safety and standards
- Have the ability to discuss and pair wines to specials and customer’s needs, equip the team to be able to broadly recommend key pairings.
- Ensure all food and drink is served to the highest standard and correct specification from the correct glass to garnish, you and your team will know the menu inside out and understand any dietary requirements.
- Have a sound knowledge and effectively manage allergens in line with EHO standards. Ensure the business holds an up to date allergy Matrix for daily specials (alongside the matrix for the normal menus).
Driven sales and cost management
- Manage the bookings diary and table plan to maximise covers in the restaurant, look ahead and make any changes required to add capacity to the restaurant.
- Ensure labour costs sit within the agreed forecast agreed by the GM, constantly forward plan and be reactive to changing weather and conditions.
- In your briefings with the team communicate any specials which need pushing to minimise wastage.
- Ensure all opportunities are taken to upsell during table service, bar service, event ticket sales and all else in between.
- Work within cash management and stock control budgets. Ensure the right amount of bar stock is on hand.
Health and safety
- Open and close the business in line with site security procedures and cash up procedures.
- Ensure the business is fit for purpose and is looking at its best, both back and front of house at all
- times.
- Report any Health & Safety issues to the GM and addressed with the utmost urgency.
- Conduct all activity in line with company policies and procedures.
- Work within the terms of the FRA, EHO, Licensing and Insurance frameworks.
- Effectively record all accidents, near misses, and damage reporting ensuring any issues are reported to the GM and rectified efficiently.
- Carry out the daily/weekly/monthly checks to meet our SFBB and H&S requirements.
Complete Any other activity/tasks as and when requested by the Directors.
Pay: £32,000.00 per year
