We’re looking for a talented and passionate Mixologist to join our team at The Three Chimneys Smokehouse & Grill in Weymouth – a 150-cover restaurant that had a major refurbishment in 2025.
Since reopening, we’ve been breaking records and growing at a fast pace. With a bold new look, fresh menus, and our exciting Games Pit entertainment space (4 Escape Rooms, Shuffleboard, AR Darts, VIP Karaoke Booths, Pool Table and more), this is a fantastic time to come on board and help us take our drinks offering to the next level.
The Role
This is more than just a bar job – we’re looking for someone who lives and breathes cocktails and wants to create memorable guest experiences. You’ll help run our cocktail station, help with general bar service including running food, and play a key role in making our venue vibrant, fun, and innovative.
You’ll also inspire and motivate the wider team: running competitions, setting targets, sharing your knowledge, and helping staff develop their own skills and ambitions. For the right candidate, there’s the opportunity to progress into our Restaurant Management Team.
Your Main Responsibilities
- Run our cocktail station – ensuring it’s stocked, prepped, and always guest-ready.
- Keep our drinks selection modern, fashionable, and exciting.
- Create cocktail menus, specials, and promotions.
- Train and inspire other team members in cocktail making and presentation.
- Help deliver exceptional bar service across the restaurant.
- Participate in staff competitions and hitting sales/morale targets.
- Maintain stock controls, minimise wastage, and support ordering.
- Work within budgets while maximising sales.
- Promote the venue across social media and support marketing campaigns.
- Maintain high standards of cleanliness, compliance, and H&S.
- Assist the Entertainment Team with Gamespit.
- Assist with running food when needed.
What We’re Looking For
- 2+ years’ hospitality experience (ideally with 1+ year cocktail-making).
- A passion for cocktails, spirits, and creative presentation.
- Ability to design and deliver signature serves.
- Calm and adaptable in busy periods.
- Professional, positive, and kind – with a guest-first attitude.
- Reliable, detail-oriented, and trustworthy.
- A good understanding of EPOS and bar operations.
- A creative thinker who balances innovation with attention to figures and costs.
