Head Chef / Kitchen Manager

Location: Aylings Garden Centre & Tearoom, A272, Trotton, West Sussex, GU31 5ES

Position Type: Full-Time (Part-Time considered for the right candidate)

Reporting To: Directors

About Us

Aylings Garden Centre & Tearoom is a friendly, family-run destination offering quality homemade food, drinks, and exceptional customer service in a welcoming environment. Our tearoom has built an excellent reputation for freshly prepared breakfasts, lunches, homemade cakes and daily specials, and we are looking for an experienced, enthusiastic Head Chef / Kitchen Manager to lead our kitchen team and help continue its success.

The Role

We are looking for a passionate, organised and experienced Head Chef / Kitchen Manager to take overall responsibility for the day-to-day running of our busy tearoom kitchen.

This is a hands-on leadership role where you will be responsible for maintaining high food standards, leading and motivating the kitchen team, managing stock and food costs, ensuring compliance with food safety legislation, and helping develop new seasonal menus and specials.

The successful candidate will be a strong team leader who enjoys producing high-quality food whilst creating an efficient, positive and well-organised kitchen.

Opening Hours

Monday to Saturday: 9:00am – 5:00pm

Sunday: 10:00am – 4:00pm

The role will include weekend working, typically on an alternate weekend basis, together with flexibility during busy seasonal periods, bank holidays and special events.

Key ResponsibilitiesKitchen Management

Take overall responsibility for the day-to-day operation of the kitchen.
Lead, motivate and develop the kitchen team.
Create staff rotas alongside management to ensure adequate kitchen cover.
Train and support new kitchen staff.
Maintain a positive, professional and supportive working environment.
Ensure excellent communication between the kitchen and front of house teams.

Food Preparation & Service

Prepare and cook breakfasts, lunches, daily specials, light bites and homemade dishes to a consistently high standard.
Maintain excellent presentation and portion control.
Ensure food is served efficiently during busy periods.
Develop new seasonal dishes, specials and menu ideas.
Maintain consistency in recipes and food quality.

Kitchen Operations

Oversee daily food preparation and kitchen organisation.
Monitor stock levels and place food orders.
Manage deliveries and supplier relationships.
Ensure stock rotation using FIFO principles.
Reduce food waste and maximise kitchen efficiency.
Monitor kitchen equipment and arrange repairs when required.

Food Safety & Compliance

Ensure full compliance with Food Hygiene Regulations and Health & Safety legislation.
Maintain a 5-star Food Hygiene Rating.
Complete and monitor all HACCP documentation.
Ensure cleaning schedules are completed.
Carry out regular temperature checks and food safety records.
Ensure COSHH procedures are followed.
Maintain excellent standards of cleanliness throughout the kitchen.

Financial Responsibilities

Monitor food costs and kitchen margins.
Control waste and improve profitability.
Assist with budgeting and cost management.
Source quality ingredients at competitive prices.
Help develop profitable seasonal menus and promotions.

Customer Experience

Ensure every meal leaving the kitchen meets our quality standards.
Work with the Tearoom Manager to continually improve customer satisfaction.
Respond positively to customer feedback.
Maintain the excellent reputation of Aylings Garden Centre Tearoom.

What We're Looking For

The successful candidate will ideally have:

Previous experience as a Head Chef, Sous Chef or Kitchen Manager.
Strong leadership and people management skills.
Excellent organisational and time management abilities.
Passion for producing fresh, homemade food.
Experience managing stock, ordering and food costs.
Good understanding of kitchen budgets and profitability.
Excellent knowledge of Food Hygiene, HACCP and Health & Safety legislation.
Ability to remain calm under pressure in a busy environment.
A positive, flexible and proactive attitude.
Excellent communication skills.
Level 3 Food Hygiene Certificate (preferred).
Allergen Awareness training.
Knowledge of Natasha's Law and food allergen legislation.
First Aid qualification (desirable but not essential).
