Experienced Sous Chef Required - Rocksalt Restaurant, Folkestone

Up to £43k per annum package including tronc

Must have experience at AA 2 Rosette standard

Rocksalt serves the best locally sourced produce from along the Kent Coast and surrounding Countryside with a strong leaning towards Fish and Seafood, holding 2 AA Rosette's since its opening in 2011. The restaurant itself sits cantilevered over Folkestone harbour with stunning panoramic views out over the English Channel. The Restaurant also boasts a stunning bar area serving its own separate bar menu, garden terrace area with weekend barbecue cooking over live fire plus 4 beautifully restored guest rooms.

This is a fantastic opportunity to join the team under the management of Executive Chef Marcin Szelag and General Manager Leon Foissy, who both possess a wealth of experience gained from some of London and The South East's finest dining destinations.

Key Responsibilities:

Section Management: Maintain total control over food preparation, cleanliness, and organization across the whole kitchen.
Menu Execution: Prepare and present high-quality dishes at 2 Rosette standard that meet the exacting standards of the business.
Seasonality & Innovation: Support the development of innovative menus that showcase the best of Kentish produce and open-fire techniques.
Consistency & Control: Monitor food quality, portion control, and waste management to ensure the necessary kitchen KPI's are met
Mentorship: Support the wider kitchen team, assisting in the development of junior chefs and ensuring a collaborative working environment.

Requirements

Experience: Minimum of 3 years in a busy, high-quality kitchen environment. Experience at 2 Rosette standard is essential.
Technical Skill: A strong understanding of modern culinary trends, best practices, and high-level kitchen operations.
Communication: Exceptional verbal and written communication skills to ensure seamless service.
Efficiency: Highly organized with the ability to manage the demands of a multi-faceted business (Restaurant, Bar, Garden BBQ and Rooms).
Eligibility: Must be eligible to work in the UK and hold a valid work permit/visa.
