The Chancery Rosewood is redefining luxury in Mayfair, housed in the former U.S. Embassy and reimagined by Sir David Chipperfield. With 144 suites by Joseph Dirand and a collection of dynamic dining and bar spaces, it’s a place where experiences are curated, conversations flow, and every detail matters.

As Head of Wine, you will lead the strategic and commercial development of The Chancery Rosewood’s wine programme — a rare opportunity to build one of London’s leading hotel wine destinations, combining deep wine expertise with direct ownership of buying, pricing, and cellar strategy.

Key Responsibilities

Lead the wine programme end-to-end — from buying strategy and cellar management to pricing, guest experience, and long-term commercial performance.
Build direct relationships with growers, producers, and importers, using the hotel’s EORI number to secure exclusive allocations and favourable terms.
Develop and curate the wine list, ensuring depth, breadth, and long-term value that reflect The Chancery Rosewood’s ambition and guest profile.
Train and inspire the wider F&B team, building wine knowledge, confidence, and guest engagement across every outlet.
Represent The Chancery Rosewood within London’s wine community, building the property’s profile, network, and industry recognition.

About You

Guest-Centricity — You anticipate guest preferences and curate wine experiences that consistently reflect the standard of a five-star environment.
Influencing — You communicate with confidence and passion about wine, building the property’s reputation and bringing others with you through knowledge and expertise.
Integrity — You manage cellar stock, pricing, and supplier arrangements with precision and full accountability, raising concerns promptly rather than deferring to others.
Drive — You bring commercial ambition and long-term vision to every buying decision, continuously developing your knowledge of wine regions, trends, and collectible releases.
Adaptability — You balance long-term cellar strategy with the day-to-day realities of service, embracing new vintages and evolving guest expectations with an open mindset.
Initiative — You proactively build the wine list, supplier network, and training programmes that elevate the hotel’s wine offering.
Strategic Thinking — You align purchasing decisions with business volumes and profitability goals, thinking years ahead rather than for the season.
Business Acumen — You manage pricing, margins, and cellar investment with commercial rigour, negotiating directly with suppliers to secure the best terms.
People Leadership — You lead, develop, and inspire your wine team, creating a culture of expertise, pride, and genuine passion for craft.
