Salary - £42,000 - £52,000 (OTE)

Lead the kitchen at one of St Andrews' most exciting new restaurant openings.

Amber is a brand-new Mediterranean restaurant from the Dean Banks Group, opening in the heart of St Andrews. Inspired by the vibrant flavours, fresh ingredients and relaxed hospitality of the Mediterranean, Amber will showcase seasonal produce, exceptional seafood, premium meats and handmade dishes in a stylish, contemporary setting.

We're looking for an ambitious and talented Head Chef to lead the kitchen from launch and establish Amber as one of Scotland's leading Mediterranean dining destinations.

This is an exciting opportunity to shape the menu, build and develop your own team, and work alongside one of Scotland's most respected hospitality groups.

About the Role

As Head Chef, you'll be responsible for the overall leadership and performance of the kitchen. You'll work closely with the senior management team to deliver exceptional food while maintaining consistency, creativity and strong commercial performance.

You'll recruit, inspire and develop your brigade, creating a positive kitchen culture where high standards and teamwork are at the heart of everything you do.

We're Looking For Someone Who:

Has previous experience as a Head Chef or an experienced Senior Sous Chef ready for their first Head Chef position.
Has a passion for Mediterranean cuisine, fresh seasonal produce and simple, ingredient-led cooking.
Can lead, motivate and develop a high-performing kitchen team.
Has excellent organisational and communication skills.
Understands food cost control, GP management and labour planning.
Maintains exceptional standards of quality, cleanliness and food safety.
Thrives under pressure while remaining calm and solutions-focused.
Is passionate about creating memorable dining experiences through outstanding food.

Key Responsibilities

Lead all aspects of the kitchen operation.
Recruit, train and develop the kitchen brigade.
Deliver consistently exceptional food quality and presentation.
Manage food costs, stock control and labour budgets.
Develop seasonal menus and daily specials in collaboration with the senior culinary team.
Maintain the highest standards of food safety, hygiene and HACCP compliance.
Build strong working relationships with front of house to deliver seamless service.
Drive a positive, supportive and high-performing kitchen culture.
