Job Summary

We’re looking for someone exceptional.

The Green Man is an independent, newly renovated country pub in the heart of Mid Dorset, and we’re looking for an outstanding Head Chef to help take us to the next level.

We don’t just want someone to run our kitchen.

We want a chef with ambition, creativity and drive. Someone who wants to build a reputation, develop an exceptional food offering and help make The Green Man one of Dorset’s destination country pubs.

Our vision is simple: exceptional classic pub food, elevated. Great local produce, proper cooking, strong presentation and a menu people will travel for. There's also plenty of opportunity to develop events menus and themed experiences run throughout the year where you can broad your menu offering beyond the normal.

Duties

Lead and supervise the kitchen team, including chefs, cooks, and kitchen staff, ensuring efficient workflow and high standards of food quality
Oversee food production processes, from ingredient sourcing to final presentation, maintaining consistency and excellence in every dish
Develop innovative menus that reflect current culinary trends while catering to guest preferences and dietary requirements
Ensure strict adherence to food safety regulations and sanitation standards across all kitchen operations
Manage inventory levels, order supplies, and control costs to optimize kitchen efficiency without compromising quality
Train team members on food preparation techniques, cooking methods, and hospitality best practices to foster skill development
Coordinate with front-of-house staff to ensure seamless service delivery and guest satisfaction

Experience

Proven supervising experience in a fast-paced culinary environment, ideally within a restaurant or hospitality setting
Extensive culinary experience with strong skills in food preparation, cooking techniques, and menu development
Demonstrated leadership capabilities with the ability to manage diverse teams effectively and motivate staff toward shared goals
Solid understanding of food safety standards and regulations applicable to commercial kitchens
Previous restaurant experience with a focus on high-quality food production and service excellence
Experience managing kitchen operations, inventory control, and cost management strategies
Knowledge of hospitality principles related to serving guests and ensuring memorable dining experiences

We’ve built an amazing team and our focus is on strengthening it further, growing the business and taking our food offering to another level.
