Operations Manager – Casa Bianca Group
Location: South Wales – overseeing 5 Casa Bianca sites
Reporting to: Directors / Managing Director
Role: Full-Time, Multi-Site Operations Manager
Role Overview
Casa Bianca Group is looking for an experienced, hands-on Operations Manager to take responsibility for the day-to-day operation and performance of our five restaurant sites.
This is a senior operational role for someone who can lead managers, maintain high standards across every venue, control costs and drive sales and profitability.
The Operations Manager will act as the key link between the Directors and each restaurant management team. You will be expected to spend significant time in the venues, identifying problems, implementing solutions and ensuring agreed actions are completed.
Key Responsibilities
Multi-Site Operations
● Oversee the day-to-day operation of all 5 Casa Bianca restaurants.
● Visit sites regularly, including evenings and weekends where required.
● Ensure every restaurant consistently meets Casa Bianca standards.
● Hold General Managers accountable for the performance of their individual sites.
● Carry out regular operational audits and follow up on any actions identified.
● Ensure opening, closing and management procedures are being followed.
● Identify operational problems before they become major issues.
Management & Leadership
● Manage, support and develop the General Managers across all five sites.
● Hold structured weekly meetings with site managers.
● Set clear targets and deadlines and ensure they are achieved.
● Support managers with recruitment, training, performance management and staff development.
● Identify weaknesses within management teams and put improvement plans in place.
● Help create a strong management culture based on accountability, standards and results.
Financial Performance
● Take responsibility for improving profitability across the group.
● Review weekly sales, labour, food costs and other key operating costs.
● Ensure staffing levels and rotas are appropriate for forecast sales.
● Monitor wage percentages and reduce unnecessary labour costs.
● Work with managers to minimise waste, over-ordering and stock losses.
● Review site P&Ls and understand the reasons behind variances.
● Identify opportunities to increase revenue and reduce costs without compromising standards.
Sales & Business Development
● Drive sales across all five restaurants.
● Work with the Directors and marketing team on promotions, events and seasonal campaigns.
● Increase bookings, repeat customers and local awareness.
● Identify underperforming trading periods and implement plans to improve them.
● Ensure managers actively promote their restaurants within their local communities.
Food, Service & Customer Experience
● Maintain consistently high food and service standards across the group.
● Regularly inspect restaurants from a customer’s perspective.
● Monitor customer feedback and online reviews.
● Investigate serious complaints and ensure appropriate action is taken.
● Ensure problems are fixed rather than repeatedly reported.
● Work closely with kitchen and front-of-house management to maintain consistency.
Compliance & Health & Safety
● Ensure all restaurants comply with food hygiene, health & safety, fire safety and licensing requirements.
● Ensure HACCP systems, temperature records, cleaning schedules and other compliance records are properly maintained.
● Carry out regular compliance checks.
● Ensure staff training records are current.
● Work with managers to maintain excellent Food Hygiene Ratings.
● Ensure incidents, accidents and maintenance issues are correctly recorded and escalated.
Stock & Suppliers
● Monitor stock control procedures across all sites.
● Ensure regular and accurate stocktakes are completed.
● Investigate unusual stock variances.
● Monitor food and beverage purchasing.
● Work with suppliers to maintain quality while achieving competitive pricing.
● Ensure managers are controlling waste, breakages and complimentary items.
Maintenance & Presentation
● Ensure all five restaurants are maintained to a high standard.
● Identify maintenance requirements during site visits and ensure they are completed.
● Ensure restaurants are clean, well presented and ready for service at all times.
● Protect the Casa Bianca brand and ensure consistency across the group.
Weekly Reporting
The Operations Manager will provide the Directors with a clear weekly overview covering:
● Sales performance by site
● Labour/wage percentages
● Food and beverage costs
● Stock issues
● Customer feedback
● Staffing/recruitment issues
● Compliance
● Maintenance
● Site-specific problems
● Actions completed from the previous week
● Priorities for the following week
The expectation is not simply to report problems, but to take ownership of resolving them.
What We’re Looking For
The successful candidate should have:
● Strong hospitality management experience.
● Experience managing restaurants, bars or similar hospitality businesses.
● Multi-site management experience is highly desirable.
● Strong leadership and people-management skills.
● Good understanding of restaurant P&Ls, labour control and food costs.
● Excellent organisational skills.
● Strong knowledge of hospitality compliance and food safety.
● Ability to manage several locations and priorities simultaneously.
● Confidence dealing with difficult conversations and holding managers accountable.
● A hands-on approach and willingness to work during key trading periods.
● Full UK driving licence and ability to travel between sites.

Working Pattern
This is not a Monday-to-Friday office role.
The Operations Manager will be expected to structure their working week around the needs of the restaurants, including regular evening and weekend site visits.
The successful candidate will have significant autonomy but will be expected to deliver measurable improvements across all five Casa Bianca locations.
Overall Objective
To make all five Casa Bianca restaurants operate consistently, professionally and profitably, while reducing the amount of day-to-day operational involvement required from the Directors.
Pay: £40,000.00-£60,000.00 per year
