HEAD CHEF – BRUACH, BROUGHTY FERRY

Salary: £35,000 basic + tronc, with average total earnings of £43,000
Full-time, Permanent, 45 hours over 4/5 days of 7 | Start: w/c 28th September 2026
ABOUT THE ROLE
Bruach is an award-winning gastropub in the heart of Broughty Ferry, and it's about to get even better. We're undergoing a major transformational refurbishment to make Bruach the standout destination in the area, and we're looking for a Head Chef to lead the kitchen through this next chapter.
This is a genuine leadership role. You'll lead the kitchen day to day: developing menus, running the pass, managing your team, and owning your KPIs. You'll be dealing directly with the owner, not a layer of head office management, so decisions get made quickly and support is always close at hand.
THE FOOD
Bruach's food is built on the dishes people genuinely love, done properly. Think elevated classics: quality, thoughtfully sourced ingredients, real cooking techniques, and presentation that matches the setting we're creating. We care about getting the details right on the dishes that matter.
This is a kitchen for a chef who takes real pride in doing produce-led food very well and consistently.
We work with a trusted network of local suppliers including butchers, fishmongers and fruit and veg merchants, and we want a chef who cares as much about that relationship as we do.

WHAT YOU'LL BE DOING
- Playing a central role in relaunching Bruach as one of Dundee's standout venues
- Taking full ownership of Bruach's kitchen operations, from prep to pass
- Leading, developing and scheduling a motivated kitchen team
- Designing and costing menus that reflect Bruach's elevated, seasonal, locally sourced identity
- Owning kitchen KPIs including GP, food cost, wastage and labour
- Building and maintaining relationships with our local suppliers
- Maintaining food safety, hygiene and compliance standards to the highest level
ABOUT YOU
- A confident, experienced Head Chef ready for a new challenge in an award-winning venue, or a strong Senior Sous Chef ready to make the step up and take charge of their own kitchen
- A genuine passion for seasonal, locally sourced food and a hands-on approach to menu development
- Strong leadership skills, someone who builds a kitchen team up rather than just manages it
- Commercial awareness, comfortable with dish costing, GP and running a kitchen as a business
- High standards for food safety, hygiene and consistency
- Resilient and adaptable, ready to lead a team through a relaunch from the outset

TIMELINE
W/c 28th September 2026: Start date. You'll spend this period working on menu development alongside our Group Chef at our other Dundee venue while the venue transformation at Bruach is completed.
W/c 5th October 2026: Bruach reopens.
