Full job description

As Bar Manager, you set the energy behind the bar and play a key role in every guest and team member experience through your warmth, knowledge, professionalism, and passion for great hospitality.

Working closely with the wider management team, you will lead a confident, knowledgeable and welcoming bar team, creating an environment where people feel supported, motivated and proud of what they do.

This is a hands-on leadership role at the heart of Dover Street Counter. We are looking for someone who loves great drinks, genuinely enjoys looking after people, and knows how to combine exceptional service with a well-organised, successful restaurant bar.

Duties

Lead the bar team with energy, warmth and a hands-on approach.
Deliver an exceptional guest experience through genuine hospitality and attention to detail.
Maintain consistently high standards across drinks, presentation and service.
Train, develop and inspire the bar team, building their confidence and product knowledge.
Support onboarding and retention of a strong bar team.
Manage stock levels, ordering, deliveries and stock rotation.
Monitor wastage, GP and other key bar costs.
Ensure the bar is clean, organised, fully stocked and ready for every service.
Maintain high standards of food safety, health & safety and licensing compliance.
Communicate clearly with the floor, kitchen and wider management team.
Handle guest feedback and team concerns with empathy and professionalism.
Bring ideas, creativity and energy to the drinks offering.
Represent the Dover Street Counter brand with pride.

Requirements

A genuine passion for hospitality, drinks and looking after people.
Previous experience as a Bar Manager, Assistant Bar Manager or similar leadership role within a busy, high-quality-driven venue.
Strong knowledge of drinks, bar operations and stock management.
Warm, approachable and naturally engaging.
Strong leadership, communication and organisational skills.
Awareness and confidence managing costs and wastage.
A natural leader who develops people through encouragement, support and example.
Positive, calm and solutions-focused under pressure.
Happy to be present on the floor and behind the bar — this is a hands-on role!

Cash Incentives & Benefits

Loyalty Bonus – £300 cash bonus for every 6 months of completed service, paid in your next pay cheque (hourly paid employees only).
£150 dining voucher after 6 months of continuous service (redeemable Monday & Tuesday).
£10 taxi contribution for team members finishing after the last Tube (Monday–Thursday & Sunday, one ride per day).
Introduce a Star – £1,000 referral bonus – £500 when your referral passes probation and a further £500 after they complete 6 months.
