Assistant General Manager

The Merchant is entering a new chapter. Following a full refurbishment and the appointment of a new Head Chef, we're developing a food-led hospitality venue centred around quality British cooking, great drinks and consistently good service.
We're looking for an Assistant General Manager to work alongside the General Manager and Head Chef, helping drive standards, lead the team and deliver a venue that people want to return to.
This is an opportunity to join an independent business where you'll have genuine responsibility, influence over the operation and a clear route to progression.
The Role
You'll support the day-to-day running of the business, leading from the floor and ensuring every service is delivered to a high standard.
Working closely with both the kitchen and front-of-house teams, you'll help create an environment where guests receive a warm welcome, service runs efficiently and the team enjoys coming to work.
You'll also play an important role in the commercial performance of the venue, supporting labour management, stock control, recruitment and team development.
Responsibilities
- Support the General Manager in the day-to-day operation of the venue.
- Lead service from the floor and maintain high standards throughout every shift.
- Take responsibility for the venue in the General Manager's absence.
- Work closely with the Head Chef to ensure food and service are delivered seamlessly.
- Recruit, train and develop the front-of-house team.
- Support labour management, rotas and operational planning.
- Assist with stock control, ordering and gross profit performance.
- Ensure compliance with licensing, health & safety and food safety standards.
- Drive a positive team culture built around accountability and great hospitality.
About You
You'll already have management experience within a busy hospitality environment and be looking for a role where you can have a real impact.
You're organised, calm under pressure and enjoy leading from the front. You understand the importance of strong systems, good communication and attention to detail, but you also know that hospitality is ultimately about people.
You'll have a genuine interest in food and drink and enjoy working closely with both the kitchen and front-of-house teams to deliver a consistently high-quality experience.

Pay: £32,000.00-£35,000.00 per year
