This is an exciting opportunity for a hands on Food and Beverage Manager to join a quality hotel operation near Penrith. The role is focused around one central restaurant, delivering breakfast, lunch, dinner and afternoon tea, with a food style centred around open fire cooking and a refined guest experience.
The restaurant holds a Rosette and can serve up to 70 covers, with steady business throughout the year rather than relying on one peak season. Guests visit for everything from business, conferences and banqueting to family occasions, partner getaways and special treats, creating a varied and consistently busy operation.
This role would suit a dynamic, adaptable and physically present Food and Beverage Manager who enjoys being on the floor, guiding the team and driving service standards. You will oversee between 20 and 30 part time and full time team members, supporting the Restaurant Manager, Bar Team Leader and wider team with rotas, stock takes, ordering, training and day to day service delivery.
Upselling is a key focus for the business, so the right person will need to be confident coaching the team on guest interaction, product knowledge and service opportunities. This is a strong opportunity for someone from a hotel, bistro, restaurant or Rosette background, including a rising star Assistant Food and Beverage Manager who is ready to step up into a full Food and Beverage Manager role.
This role does not provide accommodation, so you must be able to reliably commute or relocate to the area. You must also be able to drive due to the location.

Food and Beverage Manager Ideal Profile:

Experienced Food and Beverage Manager or strong Assistant Food and Beverage Manager ready to step up

Background in hotel, bistro, restaurant or Rosette level service would be highly desirable

Strong leadership skills with experience managing a team in a high quality hospitality setting

Hands on and confident leading from the floor during service

Experience overseeing restaurant, bar, breakfast, lunch, dinner and afternoon tea operations

Team focused leader who can guide, motivate and develop a team of 20 to 30 people

Confident supporting rotas, stock takes, ordering and day to day operations

Strong understanding of upselling, guest interaction and service training

Excellent interpersonal and communication skills with guests, staff and suppliers

Commercially aware with experience managing budgets, stock, forecasting and cost control

Organised, professional, adaptable and calm under pressure

Food and Beverage Manager Responsibilities:

Oversee all food and beverage operations within the hotel restaurant

Maintain high standards of quality, service and guest experience across all service periods

Lead from the floor during breakfast, lunch, dinner and afternoon tea service

Support the Restaurant Manager, Bar Team Leader and wider food and beverage team

Manage, train and develop a team of part time and full time staff

Create a culture of professionalism, teamwork, confidence and strong service standards

Oversee rotas, stock takes, ordering and daily operational organisation

Drive upselling through team coaching, product knowledge and guest focused service

Work closely with the culinary team to ensure smooth communication and consistent service delivery

Support conferences, banqueting, private dining and occasional wedding service where required

Engage with guests, gather feedback and resolve issues professionally

Monitor revenue, expenditure and department performance
