Chef de Partie — Fox Excel, Royal Docks
Fox Excel is a Grade II listed former tobacco warehouse in the Royal Docks, operating as a gastro pub, restaurant, bar, and events venue with a capacity of 1,200 guests. We sit right next to ExCeL London, one of the UK's busiest conference centres, so our kitchen runs the full range: quality bar food, a proper restaurant menu, and high-volume event catering — often on the same day.
We're looking for a Chef de Partie who owns their section, keeps standards consistent under pressure, and takes pride in the food they put out.
The Role
You'll run your section across a varied service mix, from restaurant covers to large-scale delegate catering. Volume is not an excuse for dropping standards here. You prep, you organise, you execute to spec — every service.
What You'll Do
- Own your section from prep through to service, clean and ready before the first cover drops
- Execute dishes to the Head Chef's spec, consistently
- Manage your mise en place to reduce waste and control costs
- Adapt across volume — quieter midweek covers to full-capacity event days
- Monitor quality from your section before it reaches the pass
- Keep your section clean and compliant with food hygiene standards
- Support junior kitchen team members when needed
What We're Looking For
- Proven Chef de Partie experience in a busy, high-volume kitchen
- Strong section discipline — you don't need chasing for prep or standards
- Sound allergen and food hygiene knowledge (Level 2 minimum)
- A team-first attitude
- Event catering experience is a bonus; we'll back the right person to learn
