Job Summary:
Responsible for preparing, cooking, and presenting authentic South Indian dishes to a high standard, ensuring consistency, quality, and compliance with food safety regulations. The role requires expertise in traditional South Indian cuisine, including Dosa, Idli, Vada, Pongal, Curries, Chutneys, and other regional specialties.
Key Duties and Responsibilities:
- Prepare and cook a wide range of authentic South Indian dishes according to established recipes and quality standards.
- Plan menus and develop new South Indian dishes and specials.
- Prepare batters, spice mixes, chutneys, sauces, and curry bases using traditional methods.
- Operate and maintain specialist cooking equipment, including dosa stations, tandoors, grills, and commercial kitchen equipment.
- Monitor food quality, taste, presentation, and portion control.
- Manage stock levels, order ingredients, and minimise food wastage.
- Ensure compliance with food hygiene, health and safety, and allergen regulations.
- Supervise and train junior kitchen staff in South Indian cooking techniques.
- Maintain cleanliness and organisation of the kitchen and food preparation areas.
- Work closely with management to maintain high customer satisfaction and operational standards.
Skills and Experience Required:
- Proven experience as a South Indian Chef in a commercial kitchen environment.
- Extensive knowledge of traditional South Indian cuisine and cooking techniques.
- Ability to prepare dishes such as dosa, idli, vada, uttapam, sambar, rasam, karakulumbu, biryani, and regional curries.
- Knowledge of food safety and hygiene standards.
- Ability to work efficiently in a fast-paced restaurant environment.
- Strong organisational and team-working skills.
