The Mallard, a charming 18-bedroom hotel overlooking Gullane’s renowned golf courses, is looking for a passionate and driven Junior Sous Chef to join our close-knit, professional kitchen team. Known for our warm hospitality and high-quality food, we welcome both international guests and loyal locals who return for our consistently excellent dining experience. This is an exciting opportunity for a strong Chef de Partie ready to step up, or an experienced Junior Sous Chef seeking to develop further in a supportive, quality-focused environment. What you’ll be doing
- Supporting the Head Chef and Sous Chef in the day-to-day running of the kitchen
- Leading service with confidence, ensuring smooth and efficient operations
- Delivering consistently high standards in food quality and presentation
- Mentoring and developing junior team members
- Contributing ideas to menus and daily specials
- Maintaining food safety, hygiene, and allergen standards
- Assisting with stock control, ordering, and kitchen organisation
What we’re looking for
- Experience at Chef de Partie or Junior Sous Chef level
- Strong understanding of kitchen systems and food safety
- A positive attitude and team-first approach
- Confidence in leading a section and running service
- Passion for fresh, seasonal food and high standards
