That’s why this Sous Chef position is paid completely hourly. Every single hour you spend prepping, cooking, or managing a service is tracked on our system and paid directly to you. No hidden, unpaid salary overtime.
The Role:
We are looking for a reliable, motivated Sous Chef to slot right into the heart of our kitchen team. This is a crucial middle-management role acting as the vital bridge between our two Senior Sous Chefs and our Chef de Partie (CDP) layer. You will be highly hands-on—capable of running key sections during a busy shift, but fully confident stepping up to run the hot pass, maintain food specs, and direct the line when the senior management team are off-shift.
Key Responsibilities:
The Middle-Layer Leader: Take clear daily operational handovers from the Kitchen Manager and Senior Sous team, ensuring kitchen momentum and consistency never drop.
Pass & Section Support: Run the hot pass confidently during high-volume services, or slide onto a key section to support the CDP when the printer starts backing up.
Operational Stability: Provide a dependable, professional anchor for the kitchen team, helping to eliminate shift-cover stress and ensure rota reliability.
Spec Control: Ensure our fresh food presentation, portion control, and spec sheets are fiercely maintained by the junior kitchen team.
Hygiene & Compliance: Execute daily food safety protocols (SFBB), temperature checks, and closing kitchen logs to an immaculate standard.
What We Look For:
An experienced Chef de Partie (CDP) who is ready for a structured, supported step up into management, or an existing mid-level Sous Chef looking for an honest, hourly-paid role in an independent kitchen.
