EXECUTIVE CHEF
RESPONSIBILITIES INCLUDE:
- Drive brand consistency between the portfolio of establishments.
• Role responsible for all financial aspects of the culinary operations of all venues including P&L management. • Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness.
- Develops, designs, or creates new menus and recipes based on standards or artistic contributions.
- Demonstrates knowledge of high-quality food products, presentations, and flavor.
- Ensures compliance with food handling and sanitation standards at all venues.
- Ensures compliance with all applicable laws and regulations.
- Operates and maintains all department equipment and reports malfunctions.
- Supports procedures for food & beverage portion and waste controls.
- Develop and implement environmentally friendly processes and procedures for food preparation, energy use and waste management in the restaurant.
- Management and development of the Food & Beverage staff in the areas of quality assurance, professionalism, consistency, and product knowledge.
- Assurance of cost protocols as established by fiscal budget & senior management.
- Assurance of compliance with Cayman Islands Dept. of Health regulations (includes assurance that all appropriate certifications are achieved)
- Establishment of relationships with suppliers and vendors and assurance of quality service and representation by same
- Involvement/participation in charity events, cooking demonstrations and any other events deemed beneficial to the restaurant (if needed)
QUALIFICATIONS:
- Minimum 7 years’ experience in a high-volume hotel and restaurant environment
- 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years’ experience in the culinary, food and beverage, or related professional area
- Ability to handle multiple tasks and work well in environment with time constraints.
- Ability to troubleshoot effectively.
- Detail-oriented with good organizational skills, performing work accurately and efficiently.
- Demonstrated excellent communication skills, both oral and written Strong computer skills, especially Microsoft Office (Word, Excel, PowerPoint)
- Ability to lift 50lbs; sit, stand, walk for an extended period of time.
- Must be comfortable working a flexible schedule and have the ability to work outside of normal business hours (i.e. evenings, weekends and public holidays, as needed)
Salary: US$85,000-US$100,000 per annum (Paid Monthly)
Benefits: In accordance with Cayman Islands law
