Job Title: Front Bar Lead Operator – High‑Volume Coffee & Cocktail Venue

Contract Type: Full-time, permanent role - Day, Evening & Weekend Shifts
Hours: 37.5 hours per week covering 5/7 days including weekends
Salary: £29,000 – £32,000 + bonus (OTE up to £35,000) + tronc
Pineapple Recruitment are seeking a hands‑on Front Bar Lead Operator to take ownership of a fast‑paced, high‑visibility service bar within a flagship hospitality venue. The Front Bar delivers high‑volume takeaway coffee, iced drinks, gelato, and retail items by day, and transitions into a cocktail‑led service from Thursday to Saturday evenings.
Role Overview
You will lead the Front Bar day‑to‑day, driving pace, consistency, and team performance. This is a floor‑based leadership role requiring strong control during busy service and the ability to deliver results in real time across both daytime and evening operations.
Key Responsibilities
- Lead the team during service and set the pace
- Maintain control during peak periods
- Manage queues and customer flow
- Deliver consistent drinks quality under pressure
- Oversee daytime coffee/iced drinks/gelato service
- Transition the bar into evening cocktail service
- Ensure compliance with licensing requirements
- Maintain organisation, cleanliness, and stock readiness
- Support and direct team members throughout the shift
What We’re Looking For
- Experience in high‑volume hospitality
- Confident leading a section or small team
- Strong front‑of‑house presence
- Experience across both coffee and bar environments
- Solid cocktail knowledge
- Able to work at pace and make decisions quickly
- Comfortable with both daytime and evening shifts
- Responsible alcohol retailing qualification (or willingness to obtain)
What This Role Is Not
- Not a Head Barista role
- Not a cocktail‑only bar manager role
- Not a passive or supervisory position
- Not suited to slower‑paced environments
