At The Base, we’re bringing something fresh to Barnes—a modern bakery, café, and lounge where the day starts with care, craft, and flavour.
We’re looking for a talented Executive Baker / Pastry Chef to join our team and lead the production team.
What You’ll Do
- Lead, manage, and develop production kitchen team.
- Oversee daily production schedules to meet production demands and delivery timelines. Ensure adherence to food safety, hygiene, and health & safety standards (e.g. HACCP, SALSA/BRCGS).
- Own and manage the master recipe database, ensuring all recipes are up to date, accurate, and scalable, ready to enter EPOS system for stock control. (Marketman)
- Ensure accurate recipe formulations and ingredient specifications to guarantee quality, allergen compliance, and consistency.
- Oversee the costing of all products pertinent to your department, ensuring accurate ingredient, labour, and packaging costs are maintained and reviewed regularly
- Monitor and improve operational efficiency, reducing waste and controlling costs. Maintain high levels of product consistency and quality control.
- Recruit, train and performance manage staff to build a strong, skilled production team for your department
- Collaborate with supply chain and logistics to ensure smooth operation from raw material intake to final despatch.
- Oversee maintenance and performance of bakery machinery and equipment.
- Drive a culture of accountability, teamwork, and continuous improvement.
What You Bring
- Currently working as an executive or head baker / pastry chef in a busy bakery, CPU, well regarded restaurant, or hotel.
