The Role
We're looking for an experienced and driven Sous Chef to support our Head Chef in delivering outstanding Italian cuisine. You'll be hands-on in the kitchen, mentoring the team and ensuring every dish reflects the heart and soul of Italian cooking.
Responsibilities
- Assist the Head Chef in all kitchen operations and daily service
- Lead the kitchen in the Head Chef's absence
- Prepare and cook authentic Italian dishes — fresh pasta, , sauces, and regional specialities
- Help develop and evolve the menu with seasonal Italian produce
- Train, supervise, and motivate the kitchen brigade
- Maintain strict food safety, hygiene, and HACCP compliance
- Manage stock, ordering, and food cost control
- Ensure consistent quality and portion control across all covers
What We're Looking For
- Proven experience as a Sous Chef or strong Senior CDP, ideally in an Italian kitchen
- Deep knowledge of Italian cuisine — regional dishes, fresh pasta, and classical techniques
- Level 2 Food Hygiene certificate (or equivalent)
- A calm, positive leader who thrives under pressure
- Flexible availability including evenings, weekends, and bank holidays
- A genuine love of Italian food and hospitality
