This is a rare opportunity for an experienced and ambitious Sous Chef to join a prestigious culinary team and play a key leadership role within an outstanding kitchen operation.
Working alongside the Head Chef, you will help drive culinary excellence, lead and inspire the brigade, and ensure guests enjoy exceptional dining experiences that reflect the quality and reputation of this remarkable estate.
The Role
As Sous Chef, you will be an integral part of the kitchen leadership team, supporting the Head Chef in the day-to-day management of the kitchen while maintaining the highest standards of food quality, consistency, and service.
You will lead by example, oversee kitchen operations, and help develop both menus and team members, ensuring an exceptional experience for every guest.
Key Responsibilities
- Support the Head Chef in the overall management and operation of the kitchen.
- Lead and motivate the kitchen brigade, ensuring a positive and productive working environment.
- Oversee food preparation, cooking, and presentation to ensure consistently high standards.
- Assist in the development of innovative seasonal menus using fresh, high-quality ingredients.
- Manage service periods effectively, ensuring smooth and efficient kitchen operations.
- Train, mentor, and develop junior chefs, fostering a culture of learning and progression.
- Ensure compliance with food hygiene, health and safety, and company standards at all times.
- Support stock control, ordering, supplier management, and cost control initiatives.
- Monitor food quality, portion control, and waste management to maximise efficiency and profitability.
- Take responsibility for the kitchen in the Head Chef's absence.
About You
- Previous experience as a Sous Chef, or a highly experienced Junior Sous Chef ready for progression.
- Strong leadership skills with the ability to motivate and develop a team.
- Passionate about food, quality, and delivering exceptional guest experiences.
- Experience working with fresh, seasonal ingredients in a high-quality hospitality environment.
- Excellent organisational and time-management skills.
- Calm and confident under pressure, with the ability to lead during busy service periods.
- Strong understanding of food safety, HACCP, and kitchen best practices.
- Commercially aware with experience supporting stock control and food cost management.
- Professional, reliable, and committed to maintaining the highest standards.
