Chef de Partie/ Sous Chef – Award-Winning Restaurant on Country House Estate in Caernarfon

About Us Plas Dinas Country House is an award-winning, historic 15 acre estate in the heart of North Wales that is filled to the brim with fabulous produce, a vineyard and kitchen garden. Formerly the home of the Armstrong-Jones family, we combine rich history with relaxed but premium luxury across eleven individually styled bedrooms and a renowned, destination restaurant. The team serve a monthly changing menu, created by Head Chef Daniel Ap Geraint, winner of the Wales week on Great British Menu 2025 and successful finalist in the UK overall. He is looking to add to his team with someone that loves flavour, is passionate about being a chef and wants to join us on the journey to our MICHELIN star. There is no pressure from the owners to obtain the star but we have been on such a wonderful journey and now have exciting times ahead with multi rosettes, multiple awards and a history that pulls in guests from all over the world.
We are busy throughout the year and we are very lucky to have not just a loyal following but a good reputation for a unique dining experience. We only do up to a maximum of 36 covers in the evening with 9-courses. It is about precision, storytelling on a plate and working with a team of chefs who are passionate about working with such amazing produce.

The Opportunity We are looking for an enthusiastic, passionate chef to join our kitchen team. This role is highly adaptable: you could be an experienced sous chef looking for a refreshing change with less covers and chance to get your name out in the world of gastronomy, or an ambitious junior chef eager to learn classical techniques and high-end execution at the start of your career. We are a Condé Nast Johansens Luxury Hotel of the World, currently Good Hotel Guide Best Hotel in Wales 2026, Visit Wales Best Place to Eat and Best Hotel in Wales 2025 and AA Restaurant with Rooms of the Year 2025.
What You’ll Do:
- Work closely with our core kitchen team to prepare and execute fresh, seasonal menus to an exceptional standard.
- Support the Head Chef in the daily management of the kitchen.
- Assist with menu development. We encourage involvement in this.
- Prepare and deliver high quality dishes.
- Take pride in setting up, stocking, and maintaining your station with precision and speed.
- Maintain impeccable standards of kitchen hygiene, sanitation, and food safety practices.
- Bring a positive, professional, and collaborative attitude to a close-knit team.
What We Are Looking For:
- Proven experience in a professional kitchen (as a either a cdp or sous chef).
- A strong understanding of cooking methods, fresh ingredients, and kitchen equipment.
- A genuine passion for produce, foraging and seasonality.
- A desire to learn, grow, and contribute to an award-winning guest experience.
- Reliability, speed, and accuracy during busy services.
Pay: £32,000.00-£39,000.00 per year + Gratuities (Circa £8500)
