About Coyo Taco
Coyo Taco started as a little taco shop in Wynwood, Miami in 2014 and is now a global brand with sites across the US, Portugal, Paris, Panama and the Dominican Republic. London is next. Our motto is simple: todo es fresco — everything fresh. Tortillas hand-pressed daily. Guacamole smashed to order. Margaritas and agua frescas mixed from scratch. Proteins responsibly sourced. We do modern Mexican street food properly, in a place that's loud, friendly and fast — with a late-night bar tucked away once the kitchen winds down.
This summer we opened our first UK site in central London. We're putting the team together now and we want energy, hands-on attitude and people who genuinely love hospitality.
The role
Central prep is the engine room of Coyo Taco — braises, salsas, beans, batters and tortilla dough, made from scratch every day before the restaurant even opens. As CPU Supervisor you're the Head Chef's right hand: part cook, part coach, part organiser. If you're a strong CDP or a junior sous chef ready to run a kitchen day-to-day, this is your step up — and we'll back you all the way.
What you'll do
- Support the Heas Chef in getting every dish out to brand spec — same taste, same look, same speed, every time
- Run the day-to-day of the prep kitchen — coordinate the prep list and service handovers so workflows stay smooth and nothing holds up the line
- Lead from the front — guide, train and back the kitchen team so people grow their skills and enjoy coming to work
- Watch the numbers — monitor stock, help manage suppliers and control food costs, cutting waste without ever cutting quality
- Own food safety — hygiene protocols, cleanliness and HACCP standards held tight, no exceptions
What you'll bring
- Solid experience at CDP, senior chef or junior sous level in a professional kitchen, ready to take on real responsibility
- Right to work in the UK
And if you've got any of the below, even better:
- 2+ years in a high-volume kitchen, with experience across different sections
- Worked to exact recipes and ingredient specifications, using both fresh and frozen ingredients
- Worked in large operational environments before — CPU, production or multi-site kitchens
