PURPOSE OF JOB
This role will best suit someone with in depth Cask and Cellar Management Experience. We are looking for a candidate with management experience from Bar Manager and above.
Our Bar Manager will support the Assistant/ General Manager in the day to day running of the bar and cellar, taking full responsibility for the full drinks operation. This includes Stock management, wastage control, line checks, beer orders, motivating, supporting and organising the team, responding to customers and delegating tasks.
- To take responsibility of the Cellar Management.
- Have a knowledge of and oversee Compliance Paperwork, and Cellar Safety.
- To support the General and Assistant Manager in the smooth day to day running of the business
- Promote and drive the venue forward increasing sales and reputation in line with management guidelines.
- To support, lead and motivate the team to meet sales, profit and compliance targets. To run shifts and, working unsupervised, to achieve the following on a day-to-day basis:
o Excellent customer service
o Serving all drinks to the correct specification
o Maintaining a clean, safe and legal workplace
RESPONSIBILITIES / DUTIES
To oversee and guide the operation, leading by example, demonstrating how to complete tasks, motivating and coaching the team to:
- Ensure all customers are made to feel welcome and experience the level of service expected by the site and company.
- Inducting and training new colleagues in all areas of the bar, with continuous support throughout. Including completing 6-week review.
- Ensure the team are working effectively and providing levels of service expected from the company.
- Be aware of, and knowledgeable about, all promotions, events and new products in your pub, sharing your knowledge with the team to ensure that it has the latest information.
- Taking responsibility for any issues during shift, and reporting to your manager at the earliest convenience.
- Contribute to the smooth running of the venue on a day-to-day basis.
- Ensure that all areas of the bar are maintained in a clean, hygienic, and safe condition.
- Ensure all daily/weekly paperwork work is being completed by the team.
- Take full responsibility for cellar standards- including all paperwork, stock rotation and standards.
- Have control of Wastage Levels and Stock ordering.
- Ensure the public area is kept clean, tidy and free from hazard in line with company standards.
- To follow all in-house rules and guidance and promote them to ensure smooth running of the venue.
- Follow waste management guidance from the management team.
- Complete daily financial and cash-up processes
- Resolve daily absence, and ensure sickness is recorded in the correct way.
- Deliver allergy training and knowledge on how to deal with allergy queries in depth. Ensure team are following the correct process throughout service.
- Train your team in all areas of HGEM (mystery customer) visits and reports.
- Deliver coffee training, and have responsibility for coffee specs and standards. Including cleanliness and upkeep of machinery.
- Managing stock holdings and minimise stock issues:
- Complete weekly drinks orders
- Monitor correct pouring and dispensing of products
- Complete daily line checks and log all wastage
- Complete weekly stock takes in line with company policy
- Maintain personal hygiene and cleanliness and follow the staff uniform policy.
