Job Overview
We are seeking a commercially focused and hands-on General Manager to lead one of our pubs within the Market Taverns estate.
With 14 independent pubs across Central & West London, each site has its own identity, offer, and guest profile. This role is about owning your business, delivering a standout guest experience, building a strong local reputation, and driving consistent financial performance.
The successful candidate will combine strong operational leadership with a clear understanding of how to grow sales, manage costs, and create a pub that people choose to return to.
Key Responsibilities
- Take full ownership of your pub’s P&L, delivering against sales, wage, and GP targets
- Lead the day-to-day operation, ensuring high standards across service, product, and environment
- Build, lead, and develop your team through effective recruitment, training, and performance management
- Create and deliver a clear “reason to visit” for your pub, tailored to your local market and guest base
- Drive sales through events, activations, and local marketing, working with central support where needed
- Maintain strong collaboration with the kitchen to deliver consistent food quality and margin performance
- Manage stock, ordering, and suppliers to ensure tight cost control and availability
- Ensure full compliance with licensing, health & safety, and food hygiene standards
- Use weekly reporting to review sales, labour, GP, and like-for-like performance, taking action where required
- Maintain high standards across the site, ensuring it is always clean, well-presented, and operationally sound
- Act as the face of the pub within the local community, building relationships and driving repeat business
Experience & Skills
- Proven experience as a General Manager or strong Deputy within a London pub or similar fast-paced hospitality environment
- Strong commercial awareness, with experience managing budgets, labour, and GP performance
- Experience across both wet-led and food-led operations
- Confident in leading, motivating, and developing teams
- Good understanding of stock control, ordering systems, and supplier management
- Solid knowledge of licensing laws, health & safety, and food safety standards
- Able to balance autonomy with accountability within a multi-site group structure
- Hands-on, organised, and comfortable working in a high-energy environment
Job Type: Full-time
Pay: £45,000.00-£55,000.00 per year
