Job Description
As a Commis Chef, you will be responsible for the consistent delivery of outstanding food across all areas of the building, and you will play a key role in delivering a catering offering that can bring custom at quieter times of day, truly integrating our food service into the vibrant life of the theatre.
The hours of work are variable according to the requirements of the theatre and cinema, your ability to be flexible is required.
Principal Responsibilities
Food Preparation + Service
· Preparing and cooking dishes consistently to specification
· Supporting with plating and presentation of dishes in line with brand standards
· Supporting services across the café, bar and event catering as required, including performances and private functions
· Working efficiently through preparation lists and mise en place for each service
· Assisting senior kitchen staff with daily kitchen operations, including opening and closing procedures
· Contributing your ideas to keep the café menus fresh and appealing, including showcasing the best seasonal and locally sourced produce where possible
Kitchen Support + Hygiene
· Maintaining excellent hygiene and cleanliness across all kitchen areas
· Supporting the Visitor Experience team in following daily HACCP routines (temperature checks, allergen logs, cleaning schedules, etc.)
· Using and storing cleaning chemicals correctly in line with COSHH guidance
· Keeping fridges and storage organised and properly labelled
· Maintaining awareness of allergens and dietary requirements
· Supporting sustainability and waste reduction initiatives within the kitchen and across the wider organisation
Teamwork + Communication
· Collaborating with the wider Visitor Experience team to ensure smooth kitchen service
· Taking guidance from the Senior Chef de Partie + Head of Commercial Operations during busier periods
· Sharing creative ideas and feedback to improve menus and working practices
Stock Awareness
· Following stock rotation practices to maintain freshness and minimise wastage
· Supporting with deliveries and proper storage of ingredients
· Recording any wastage and highlighting low-stock items
· Ensuring all financial procedures are adhered to, including use of the electronic ordering system, checking and receipt of all deliveries, and retention of all appropriate documentation
General Responsibilities
· Any other duties requested by the Line Manager, which are reasonable requirements for the job of Commis Chef
