The Old School House on Lark Lane is on the hunt for a dedicated and passionate Sous Chef to join our kitchen team. The ideal candidate will play a vital role in supporting the Head Chef in managing kitchen operations, ensuring the highest standards of food production and safety. This position is perfect for individuals who thrive in a fast-paced environment and have a strong background in hospitality and food preparation.
Duties -
- In the absence of the head chef ensure efficient, effective running of the kitchen and back of house areas.
- Contribute towards and manage allergen matrixes, Safer Food, Better Business booklets, fridge temperature documentation, and all EHO procedures. Help manage staffing levels and guarantee the kitchen is consistently appropriately staffed.
- Assign roles and job responsibilities daily for kitchen members and ensure these are completed to the required standards.
- Ensure all sections are covered and the kitchen is consistently well-staffed. Requirement to work peak periods(bank holidays and festive periods). Help address disciplinary processes within your team in line with company procedures.
- Implement training processes with the head chef; train new staff members to the standard required.
- Guarantee the preparation and presentation of all food is the highest standard and complies with food safety regulations including COSHH and HACCP. To ensure all food is served to the required company spec; developing and regularly maintaining spec books and recipes.
- Contribute towards developing, costing, and implementing new menus with the owner.
- Ensure consistently high standards of cleanliness in all kitchen operations with respect to regular audits and EHO visits to 5* standards.
- Maintain a professional, positive working relationship with the food service team. Ensure correct stock and prep levels for all periods, minimizing wastage. Report and find solutions for maintenance issues relating to kitchen equipment and facilities; source replacements and sign off costs with the operations team.
We are open 7 days a week.
Our Kitchen is open from 10am-9pm.
Pay: £34,000.00 per year
