Job Summary
We are seeking a passionate and talented Chef de Partie to join our kitchen brigade at Cricklade House Hotel. The successful candidate will be responsible for running a designated section of the kitchen, ensuring high standards of food preparation, presentation, and hygiene are consistently maintained. This role offers an excellent opportunity to develop culinary skills within a busy hotel, restaurant, wedding, and events environment.
Key Responsibilities
- Manage and oversee a specific section of the kitchen during service.
- Prepare, cook, and present dishes to the hotel's quality standards.
- Ensure all food is prepared using fresh ingredients and correct cooking techniques.
- Maintain consistency in food quality, portion control, and presentation.
- Assist with menu development and seasonal specials.
- Support and mentor Commis Chefs and Kitchen Assistants.
- Monitor stock levels and report shortages to senior chefs.
- Maintain high standards of food safety, cleanliness, and kitchen organisation.
- Ensure compliance with Food Safety, HACCP, allergen regulations, and health & safety procedures.
- Work effectively under pressure during busy service periods, including weddings, conferences, and events.
Requirements
- Previous experience as a Chef de Partie or strong Demi Chef de Partie within a hotel, restaurant, or hospitality environment.
- Excellent knowledge of food preparation and cooking techniques.
- Ability to work confidently across different kitchen sections.
- Strong understanding of food hygiene and safety standards.
- Good organisational and time-management skills.
- Ability to work effectively within a team.
- Passion for fresh, seasonal produce and high-quality food.
- Flexible approach to working evenings, weekends, and holidays.
Desirable Qualifications
- NVQ Level 2/3 in Professional Cookery or equivalent.
- Food Safety Level 2 Certificate.
- Experience within a hotel, spa, wedding, or banqueting operation.
