This apprenticeship provides routes into Production chef, Commis Chef, or Food and Beverage team member apprenticeships.
Qualification topics:
- Health and Safety legislation and regulations
- Food safety, allergens and hygiene legislation and procedures
- Equity, diversity and inclusion principles
- Principles of communication and dealing with feedback, complains and issues
- Methods of producing basic dishes including weighing, measuring and scaling
- Principles of serving food and beverage to business standards
- Basic knife skills
- Use of equipment and technology to meet business standards
- Sustainability and waste management
- Seasonality and quality of ingredients
- Principles of stock use and rotation
- Principles of time management, wellbeing and adapting to changes at work
- Principles of feedback and new learning
This Level 2 Apprenticeship includes:
- On the job skills training
- Off the job skills training
- Employability skills and behaviours
- Level 2 Functional Skills in English & Maths
- Discussion support and preparation
- Planning, Target Setting and Feedback
- Mock End Point Assessments
Typical completion in 9 months plus up to 3 months for End Point Assessment to take place.
