We’re looking for a passionate and driven Head Chef to lead our kitchen — someone who lives and breathes real smokehouse cooking, thrives in a creative, fast-paced environment, and knows how to inspire a team.
Key Responsibilities
- Lead the day-to-day operations of the kitchen, ensuring smooth service and exceptional food quality.
- Oversee preparation and presentation of all smoked meats, sides, and seasonal dishes to maintain Firehouse’s signature flavour and consistency.
- Create and develop menu items that celebrate fire, smoke, and Scottish produce, while managing food costs effectively.
- Champion food safety, hygiene, and health & safety standards in line with HACCP and EHO requirements.
- Manage ordering, stock control, and supplier relations for top-quality ingredients and cost efficiency.
- Recruit, train, and mentor kitchen staff, fostering a fun, professional, and supportive kitchen culture.
- Collaborate with the management team on menu design, special events, and continuous improvement of the guest experience.
- Control kitchen budgets, manage GP targets, and ensure profitability without compromising quality.
What We’re Looking For
- Proven experience as a Head Chef or Senior Sous Chef in a high-volume or smokehouse-style restaurant.
- Exceptional leadership, communication, and organisational skills.
- Strong knowledge of wood-fired cooking, American BBQ, and modern Scottish flavours.
- Passion for quality, consistency, and creativity.
- High standards of cleanliness, safety, and professionalism.
- Ability to thrive under pressure while keeping the team motivated and positive.
