Job Summary
We are seeking a skilled and experienced Sushi Chef Manager or Sushi Chef Assistant Manager to lead our culinary team. The successful candidate will be responsible for overseeing sushi food production, maintaining high standards of food safety, and ensuring exceptional service delivery. Duties
- Supervise daily sushi food preparation, ensuring consistency and quality across all dishes
- Manage and train kitchen staff in sushi techniques, food safety standards, and best practices
- Oversee the organisation of kitchen operations, including inventory control and ordering supplies
- Maintain high standards of cleanliness and hygiene in accordance with health regulations
- Lead by example in food presentation, cooking techniques, and customer service
- Coordinate with front-of-house staff to ensure seamless service delivery
- Monitor food costs and optimise utilisation of ingredients to minimise waste
- Assist in menu development, incorporating innovative sushi options to attract customers
- Ensure compliance with all relevant health and safety legislation within the kitchen environment
Experience
- Proven supervising experience within a professional kitchen setting, ideally specialising in sushi or Japanese cuisine
- Extensive background in food production, cooking, and food preparation techniques
- Demonstrable team management skills with the ability to motivate and lead a diverse culinary team
- Strong knowledge of food safety standards and regulations applicable to restaurant kitchens
- Previous restaurant experience, particularly in hospitality environments that focus on serving high-quality cuisine
- Experience in managing kitchen operations, including inventory control and staff scheduling
- Familiarity with culinary trends related to sushi and Japanese dishes is desirable but not essential
