As a Prep Chef you would work at our restaurant on Gardner Street in Brighton. The daily prep chef is responsible for cooking our rice, preparing fresh produce and making our fresh sauces and salads whilst maintaining proper hygiene and food safety standards. You would have a Supervisor on shift with you as well as 1-3 other team members.
Key skills and personality traits in a strong Prep Chef are efficiency, consistency, proactivity, attention to detail, work ethic, clear communication skills, ability to prioritise and delegate, leadership as well as a love of food and hospitality.
As we work in an open kitchen you will also be trained how to take orders and assemble dishes, but your main role will be in ingredient preparation, stock control and keeping a clean and tidy workspace.
It is key to Happy Maki that product consistency is kept to a very high level which requires consistent preparation and assembly methods. The Prep Chefs oversee all these processes closely with the Supervisor on shift.
RESPONSIBILITIES
- Service shifts at our restaurant in Brighton
- Preparing Happy Maki’s salads and sauces before service each day
- Fast paced food preparation and excellent understanding of food hygiene
- Close monitoring of food prep levels
- Good communication with team members
- Ensure quality control and consistency on shift
- Good understanding of ingredients and allergens
- Good understanding of full menu (sushi rolls, sushi bowls, sides, drinks, sauces, salads)
PERSONAL REQUIREMENTS
- Previous kitchen experience
- Desire to take responsibility and use initiative in the role.
- At least Level 2 Food Hygiene certificate, completed prior to role commencing
- Confident and efficient knife skills for large amount of veg prep
- Confident organizational skills
- Clear communicator
- Clear desire to be a team player
- Strong multi-tasking skills
- Physically fit and strong
- Very hard working and productive
- Clean and tidy work practices
- Passion or understanding for veganism

Happy Maki runs as an open kitchen with no table service, so the whole team is very much involved in the running of the kitchen, serving customers directly, food preparation and plating up. This role will suit someone who likes to be hands on and loves working with people and food. It is key to Happy Maki’s success that product consistency is kept to a very high level which requires strong understanding and consistent monitoring of preparation and assembly methods.
