About the Role
We are looking for experienced hot kitchen staff to join our kitchen team. You will be cooking Asian fusion dishes (Japanese and Chinese-inspired) for our all-you-can-eat menu and a la carte menu.
This role is demanding. You must be able to work under high pressure, manage multiple orders simultaneously, and prioritise tasks without supervision.
Key Responsibilities
Wok Cooking (Chinese & Japanese Style)
- Cook udon, ramen, rice, stir-fried vegetables, meat, and seafood dishes in a wok
- Master wok tossing – ability to toss ingredients properly at high heat
- Control heat levels for different dishes (quick stir-fry vs. slower braised dishes)
- Adjust seasoning and sauce quantities according to recipe standards
Deep-Frying (Tempura, Katsu, etc.)
- Prepare and fry tempura (prawns, vegetables, chicken)
- Fry katsu (chicken, pork) to golden and crispy
- Maintain correct oil temperature and change oil when needed
- Drain excess oil properly before serving
Vegetable & Meat Preparation (Knife Skills)
- Cut vegetables evenly (julienne, dice, slice, chop) for different dishes
- Slice meat (chicken, beef, pork) to the correct thickness for stir-fry
- Marinate the meat according to the recipe
- Prepare sauces and batters in advance
Plating & Ticket Management (High Pressure)
- Read and understand kitchen tickets quickly and accurately
- Prioritise orders – know which dishes to cook first and which can wait
- Coordinate multiple dishes from different sections (wok, fryer, garnish) to finish at the same time
- Ensure every dish leaves the kitchen complete, correct, and on time
- Work with front-of-house to manage wait times and special requests
Cleaning & Closing Duties
- Clean woks, fryers, and all cooking equipment after service
- Degrease kitchen surfaces and extractor hoods (basic level)
- Sweep and mop the kitchen floor at the end of the shift
- Take out rubbish and recycling
- Follow all food safety and HACCP standards
What We Are Looking For
- Proven experience in a high-volume Asian / wok kitchen (minimum 2 years)
- Must have wok tossing skills – this is essential
- Ability to work under extreme pressure during peak hours (lunch and dinner rush)
- Strong organisational skills – able to handle 10-20 tickets at once
- Positive working attitude – willing to do cleaning and extra essential tasks without complaint
- Hard-working, reliable, and punctual
- Fluent English communication (to read tickets and follow instructions)
Not suitable for
- Beginners or trainees
- Chefs who cannot work under pressure
- Anyone unwilling to clean or do "non-cooking" tasks
