This is a fantastic opportunity for an Assistant Head Sommelier to join a flagship 5 AA Red Star luxury hotel in the Pembrokeshire countryside. Set in the Narberth Hills and overlooking the Preseli Hills, the hotel is one of Wales’ leading luxury destinations, with 26 bedrooms, refined hospitality and a strong reputation for food, wine and guest experience.
The hotel is home to two restaurants, giving this role excellent variety across different styles of service. The Fernery holds 4 AA Rosettes and delivers a refined dining experience, while the Artisan Rooms holds 2 AA Rosettes and offers a more relaxed but still carefully considered dining experience, with the same focus on quality, provenance and attention to detail.
This role would suit someone from a fine dining or high quality hospitality background with strong wine, spirits and service knowledge. Rosette experience would be beneficial but is not essential. What matters most is a genuine passion for world wines, excellent organisation, strong attention to detail and a warm, sincere approach to guests and the wider team.
This role does not provide accommodation, so you must be able to reliably commute or relocate to the area. You must also be able to drive due to the location.

Assistant Head Sommelier Ideal Profile:

Outstanding experience as a Sommelier or above in a comparable fine dining environment

Clear passion for world wines, spirits, cocktails and exceptional hospitality

Excellent knowledge of wine service, pairing and guest recommendations

Well organised with strong attention to detail

Assistant Head Sommelier Responsibilities:

Support the Head Sommelier with wine service across both hotel restaurants

Deliver confident, knowledgeable and polished wine recommendations to guests

Assist with drinks service across the 4 AA Rosette restaurant and 2 AA Rosette restaurant

Support the bar and lounge areas where required

Help maintain wine standards, stock organisation and cellar presentation

Work closely with the restaurant teams to create a seamless guest experience

Support wine pairing, service preparation and daily operational organisation

Represent the hotel’s luxury standards through warm, professional guest interaction

Contribute to a positive, knowledgeable and service focused team culture
