Job Summary
We are seeking a dedicated Production Cook to be the sole culinary professional within our kitchen. The successful candidate will be responsible for preparing and cooking high-quality ready meals, ensuring food safety standards are maintained at all times. We are looking for an experienced, reliable and highly organised Production Chef to take responsibility for the kitchen operation within an established butcher shop in Elgin.
This is a sole-chef role involving the preparation of a varied range of menu items for retail sale. The successful applicant will work independently and manage the daily workload from preparation and cooking through to portioning, packaging, labelling, stock checks and cleaning.
The kitchen operates using an established weekly production system, documented recipes and food-safety procedures. Strong organisation, good timekeeping and the ability to manage several production tasks efficiently are essential.
Responsibilities
- Prepare and cook meals according to specified recipes and standards
- Manage all aspects of food preparation, including chopping, marinating, and portioning ingredients
- Maintain high standards of food safety and hygiene in accordance with health regulations
- Ensure all kitchen equipment is clean, well-maintained, and stored appropriately
- Monitor stock levels and communicate supply needs in a timely manner
- Organise the kitchen workspace efficiently to optimise workflow
- Follow documented recipes, specifications and working procedures
- Plan and prioritise preparation and cooking tasks
- Portion, package and label products accurately
- Follow allergen controls and prevent cross-contamination
- Keep the kitchen, refrigeration and storage areas clean and organised
- Follow all safety procedures during food handling and cooking processes
Experience
- Proven experience in food preparation and cooking within a professional kitchen environment
- Knowledge of food safety standards and best practices in hygiene management
- Experience working in a restaurant or catering setting is highly desirable
- Familiarity with meal preparation techniques and culinary skills
- Previous experience serving or interacting with customers is advantageous
- Demonstrated ability to work independently as the sole kitchen staff member
Previous professional cook or food-production experience is required. The successful applicant must be reliable, well organised and able to manage the kitchen independently while following established recipes, food-safety procedures and production systems. Experience in retail food production, batch cooking, stock control or production planning would be beneficial. References are required.
