Job Overview
We are seeking a skilled, disciplined, and passionate Sushi Chef to join our culinary team. The ideal candidate will have a strong foundation in Japanese cuisine, particularly sushi and sashimi preparation, with a deep respect for technique, precision, and presentation.

Key Responsibilities
- Prepare sushi, sashimi, nigiri, maki, and other Japanese dishes according to established recipes and presentation standards
- Maintain strict standards in knife skills, fish handling, and portion control
- Ensure all seafood and ingredients are fresh, properly stored, and rotated (FIFO principles)
- Minimise waste through efficient preparation and stock management
- Maintain cleanliness and organisation of the sushi station at all times
- Adhere strictly to food hygiene regulations and safe handling of raw fish and perishable ingredients
- Monitor inventory levels and communicate stock requirements promptly
- Assist in the development of seasonal dishes and new menu items
- Work collaboratively with front-of-house and kitchen teams to ensure smooth service
- Contribute to maintaining a calm, professional atmosphere during busy service periods
Required Skills & Experience
- Proven experience as a Sushi Chef or strong background in Japanese cuisine
- Excellent knife skills and knowledge of fish preparation techniques
- Solid understanding of food safety, HACCP principles, and raw seafood handling
- Ability to work efficiently under pressure without compromising quality
- Strong attention to detail and presentation standards
- Good organisational and time management skills
- Experience in a high-volume or quality-driven restaurant environment is desirable
- Passion for Japanese culinary culture and continuous professional development
