As Butchery Cutting Room Manager, you will take ownership of our cutting room and sausage production operation at Tebay Services, leading a skilled team to deliver outstanding quality, efficiency and food safety compliance.
Working closely with our farm supply chain, you will manage everything from carcass specifications and delivery scheduling through to yield, throughput and waste reduction. You will be the driving force behind a well-run, commercially focused operation — ensuring our cutting and sausage rooms consistently perform to the highest standards.
What You'll Be Doing
- Managing the day-to-day running of the cutting room and sausage room, including rotas, shift patterns and skills deployment
- Overseeing all incoming and outgoing goods, ensuring correct products and quality at every stage
- Managing stock control, stock takes, and internal and external orders
- Acting as a key supplier contact, working closely with the Category Manager
- Ensuring all meat is correctly batched and fully traceable
- Driving continuous improvement in productivity, efficiency and commercial performance
- Taking full ownership of FSA accreditation and food safety compliance, including daily paperwork and cleaning standards
- Managing and developing your team across all areas of the cutting and sausage rooms
- Deputising for the Head of Butchery and Retail Butchery Manager as required
