Job Overview:
The Sous Chef will be an integral part of our culinary team at Hotel Indigo, working directly under the Head Chef to oversee daily kitchen operations. This role includes supervising kitchen staff, ensuring the quality of food preparation and presentation, maintaining a safe and clean work environment, and contributing to the development of menus. The ideal candidate will be passionate about food, leadership, and hospitality, ensuring a memorable culinary experience for all our guests.
Key Responsibilities:
- Assist the Head Chef in managing all kitchen operations, ensuring high standards of food preparation, presentation, and service.
- Supervise, train, and develop kitchen staff, fostering a positive and collaborative work environment.
- Ensure safe food storage, handling, and sanitation practices according to health and safety regulations.
- Collaborate with the Head Chef to develop and implement seasonal menus, special events, and daily specials.
- Monitor inventory and order supplies as required, ensuring that the kitchen is fully stocked and organised.
- Ensure that all food is prepared according to Hotel Indigo's standards and maintain consistency in flavour, quality, and presentation.
- Assist in maintaining kitchen equipment and reporting any maintenance needs or breakdowns.
- Ensure compliance with all health and safety standards, including food safety protocols, kitchen cleanliness, and overall hygiene.
- Handle customer concerns and special dietary requests as required, providing exceptional service.
- Step in for the Head Chef in their absence, leading the kitchen in operations and decision-making.
- Manage kitchen staff schedules to ensure coverage and efficiency.
Qualifications:
- Education: Culinary degree or equivalent experience in a professional kitchen.
- Experience: Minimum of 3-5 years of culinary experience in a hotel or upscale restaurant, with at least 1-2 years in a supervisory role.
- Skills: Strong knowledge of kitchen operations, food safety practices, and culinary techniques. Excellent communication, leadership, and organisational skills.
- Physical Demands: Ability to stand for long periods and work in a fast-paced, high-pressure environment.
- Work Environment: Must be able to work flexible hours, including nights, weekends, and holidays, to accommodate hotel operations and special events.

- Ability to work efficiently both independently and as part of a team.
- Strong problem-solving skills and the ability to handle high-stress situations with ease.
- Previous experience with hotel or resort operations preferred.
