Please note this a seasonal role, on a contract that will close on completion of the Summer season.

About Halwyn:

Halwyn is a brand-new hospitality destination built on a family farm in Crantock on the North Coast of Cornwall - opening May 2025.

The venue will combine a bespoke contemporary farmhouse style restaurant and feasting barn, boasting panoramic 180 degree south facing countryside views and a sunset dining terrace, with a fifteen-bay golf range powered by Trackman, along with a naturally landscaped mini-golf course, playfully woven through landscaped gardens.

The dining space is distinctly separated from the golf range and is crafted from an exposed oak frame with vaulted ceilings, polished concrete flooring, custom hardwood sliding doors, and a large log burning fireplace.

During breakfast and daytime services, the dining space will be bright, spacious and connected to the landscaped gardens and wider Cornish countryside. Nighttime dining will be cosy, intimate and lit by the ambient glow of candlelight.

Our restaurant will serve fresh local ingredients from friends within the Cornish supply chain, including Trevowah Herd Beef straight from the family farm. We will also host regular feast nights, alongside a day-to-day dining experience.

Vegetables from our garden will be treated with the same care and attention. We want to create a kitchen where the chefs can learn the correct and proper skills needed to succeed in this industry. As a Chef De Partie, this is a chance to work in a brand-new kitchen, learn important skills and be an integral part of the kitchen team. Together we can build something special.

About The Role:

In your role as Chef De Partie, you will run a section of the kitchen with passion and a drive for excellence. You will help teach and guide junior members who work under you and you will receive top quality training.

Run, manage and execute service from a section in the kitchen.
Cook with quality, fresh ingredients from the local area.
Maintain high standards in personal presentation, food preparation and cleanliness.
Train and guide less experienced team members.
Monitor section inventory levels.

About You:

We are looking for the right people; skills we can teach, attitude, willingness to learn and good character come from you.
Experience in a high cover environment but still maintaining top standards.
Passion for working with quality seasonal ingredients.
Have a drive for excellence.
Understanding of how to run a section of the kitchen, preparing, cooking and presenting dishes.
Sound knowledge working in all sections of the kitchen.
Experience at multiple rosette level preferred but not essential.
