Chef de Partie (4-Day Week)

Take ownership of a daytime kitchen with a genuine work-life balance.

At Piccoloco, we're passionate about producing high-quality brunch and lunch dishes alongside exceptional specialty coffee. As an independent business with two coffee shops in Newcastle-under-Lyme, we're looking for an experienced Chef de Partie to become the second chef in our growing kitchen team.

This is a fantastic opportunity for a chef who enjoys fresh food, organised daytime service, and working in a close-knit team.

About the role

You'll work closely alongside our Sous Chef at the busiest point of the week before taking responsibility for leading the kitchen during their days off.

During weekends you'll work collaboratively to deliver our busiest services, prepare for the week ahead and continue developing menus and systems.

In the week you'll confidently lead the kitchen, supported by our Kitchen Assistant, taking responsibility for service, preparation and maintaining our standards.

Responsibilities

Preparing and delivering high-quality breakfast and lunch dishes.
Running the kitchen independently two days per week.
Supervising and supporting the Kitchen Assistant.
Organising daily prep and production.
Preparing grab-and-go food for both sites.
Maintaining excellent food quality and consistency.
Managing stock rotation and minimising waste.
Completing food safety checks and maintaining HACCP standards.
Receiving deliveries and managing stock organisation.
Maintaining a clean, efficient and organised kitchen.
Working closely with the Front of House team during service.
Contributing ideas for seasonal menus and specials.

About you

You'll ideally have experience as a Chef de Partie or be a strong Commis Chef ready to step into your first CDP role.

You'll be:

Confident running a kitchen independently.

Comfortable leading others when required.
Committed to maintaining high standards of cleanliness and food safety.
