Full job description

Job Purpose

The Sous Chef – Dessert and Pastry will be responsible for leading and managing COCO Canary Wharf’s dedicated dessert section.

The role involves developing, preparing and presenting high-quality desserts, supervising dessert-section employees, maintaining consistent presentation standards, managing stock and food costs, and ensuring the dessert section operates efficiently during busy service.

The successful candidate will work closely with the Head Chef and wider kitchen team to ensure the dessert menu complements COCO’s premium dining concept and provides guests with a consistently high-quality experience.

Main Duties and Responsibilities

Lead and manage COCO Canary Wharf’s dedicated dessert and pastry section.
Prepare, plate and present high-quality desserts consistently during busy service.
Plan daily mise en place and ensure the section is fully prepared before service.
Supervise, train and allocate duties to junior chefs and kitchen assistants.
Develop and update dessert recipes, seasonal specials and plating concepts.
Coordinate with the Head Chef, main kitchen and front-of-house teams.
Manage stock levels, ingredient ordering, portion control and food waste.
Maintain accurate temperature, cleaning and food-safety records.
Ensure compliance with food hygiene, allergen and cross-contamination procedures.
Adapt desserts for dietary requirements where operationally possible.
Maintain cleanliness and organisation throughout the dessert section.
Support consistent service standards, customer satisfaction and menu quality.

Skills and Experience

Previous professional experience within a dessert, pastry or bakery section.
Experience independently managing or taking responsibility for a kitchen section.
Strong knowledge of dessert preparation, pastry techniques, plating and presentation.
Ability to produce high-quality desserts consistently during busy service.
Experience creating or updating dessert menus and recipes.
Good understanding of food hygiene, allergen control and health and safety procedures.
Experience supervising, training or supporting junior kitchen employees.
Ability to organise preparation schedules and prioritise work effectively.
Good stock-control, portion-control and waste-management skills.
Strong attention to detail and creative presentation ability.
Ability to remain calm and organised in a high-volume restaurant environment.
Good communication and teamwork skills.
Flexibility to work evenings, weekends and public holidays.

Qualifications

Relevant culinary, pastry or professional cookery qualification is desirable.
Level 2 or Level 3 Food Safety and Hygiene qualification is desirable.
Allergen-awareness training is desirable.
Equivalent professional experience within a dessert or pastry kitchen may be accepted.

Performance Expectations

The Sous Chef – Dessert and Pastry will be expected to:

Maintain consistent dessert quality, taste and presentation.
Ensure the dessert section is fully prepared before each service.
Deliver orders within the restaurant’s required service times.
Maintain high food-hygiene and cleanliness standards.
Reduce avoidable food waste and control ingredient costs.
Train and develop junior dessert-section employees.
Maintain accurate stock, temperature and cleaning records.
Contribute creative ideas for seasonal menus and new dessert offerings.
Support positive customer feedback and the restaurant’s overall reputation.
