Sandwich Production Manager
We are looking for an experienced and enthusiastic Sandwich Production Manager / Senior Sandwich Maker to join our busy food production team.
We supply freshly prepared sandwiches, baguettes, wraps and other food products across our shops, and we are looking for someone who can take real ownership of our sandwich production operation.
This is a hands-on management role. You will work alongside the sandwich-making team every day, leading by example while making sure everything is prepared correctly, looks fantastic and meets our high standards for quality, consistency and food safety.
You will be the person who makes sure everything gets done properly!
The Role
As our Sandwich Production Manager, you will oversee the day-to-day running of the sandwich production area and the team responsible for preparing our products.
You will be responsible for organising the team, planning production, checking quality, preparing and cooking fillings, making sure the correct quantities are produced for all our shops and ensuring everything is ready for the following day’s production.
You will be one of the first people in and one of the last to leave, making sure the production area starts and finishes each day exactly as it should.
Your main responsibilities will include:
Leading the Team
* Supervise and support the sandwich-making team.
* Allocate daily jobs and make sure everyone knows what they need to do.
* Work alongside the team and lead by example.
* Train new staff and help existing staff develop their skills.
* Make sure everyone follows recipes, portion sizes and preparation procedures.
* Monitor performance and address any issues with quality, productivity or standards.
* Keep the team organised and working efficiently, particularly during busy periods.
* Report any staffing or performance concerns to management.
Production & Preparation
* Oversee the preparation of all sandwiches, baguettes, wraps, rolls, fillings and other products.
* Prepare and cook chicken and other ingredients used in our fillings.
* Confidently operate commercial ovens and other kitchen equipment.
* Ensure all recipes and specifications are followed accurately.
* Ensure correct portion sizes are maintained.
* Plan production requirements for all of our shops.
* Make sure sufficient quantities are produced without unnecessary overproduction or waste.
* Organise preparation for the following day’s production.
* Ensure everything required for the next day is prepared, labelled, stored and ready to go.
Quality Control
You will have a real eye for detail and will be responsible for making sure our products are consistently excellent.
You will:
* Check the quality of products throughout production.
* Check appearance, presentation, portion size and consistency.
* Ensure products are made to our agreed recipes and specifications.
* Identify and correct mistakes before products leave the production area.
* Make sure every shop receives products of the same high standard.
* Monitor the freshness and quality of ingredients and finished products.
Food Hygiene & Food Safety
Food safety is extremely important in this role.
You will be responsible for ensuring that the whole team follows our food hygiene procedures, including:
* Correct hand washing and personal hygiene.
* Correct use of protective clothing.
* Preventing cross-contamination.
* Safe handling of raw and ready-to-eat foods.
* Correct cooking temperatures.
* Correct cooling procedures.
* Chilled food storage and temperature control.
* Carrying out and recording required temperature checks.
* Correct labelling and dating of food.
* Stock rotation and use-by date checks.
* Keeping all food preparation areas clean and hygienic.
* Ensuring cleaning schedules are completed properly.
* Reporting any food safety concerns immediately.
You will also help ensure that the production area is always inspection-ready.
Allergens & Traceability
You will help ensure our allergen procedures are followed correctly, including:
* Making sure allergen information is accurate and up to date.
* Preventing cross-contamination between products.
* Ensuring ingredients are correctly identified and labelled.
* Making sure staff understand the importance of allergen controls.
* Following our procedures for customers with allergies.
* Maintaining appropriate food traceability records.
* Ensuring ingredients and prepared products can be traced where required.
Stock & Waste Management
You will take responsibility for keeping an eye on stock and making sure we have what we need to keep production running smoothly.
This will include:
* Monitoring ingredients and packaging levels.
* Checking deliveries and putting stock away correctly.
* Ensuring stock is stored in the correct conditions.
* Correct stock rotation.
* Checking use-by dates.
* Reporting low stock and ordering requirements to management.
* Monitoring food waste.
* Identifying unnecessary waste and finding ways to reduce it.
* Making sure production quantities are appropriate for the requirements of our shops.
Cleaning & Organisation
You will make sure the production area is kept clean, tidy and organised throughout the day.
This includes:
* Work surfaces.
* Ovens and cooking equipment.
* Refrigerators and freezers.
* Preparation equipment.
* Storage areas.
* Floors and general production areas.
* Ensuring cleaning schedules are completed and signed where required.
* Making sure the team cleans as they go rather than leaving everything until the end of the day.
Opening & Closing
You will play a key role in opening and closing the production operation.
At the beginning of the day you will:
* Check the production area is clean and ready.
* Check equipment and ovens.
* Check ingredients and stock.
* Organise the team.
* Allocate production tasks.
* Make sure the day’s production gets off to a good start.
At the end of the day you will:
* Check all required production has been completed.
* Make sure preparation for the following day is complete.
* Check food has been cooled, labelled and stored correctly.
* Check stock and storage areas.
* Make sure cleaning has been completed properly.
* Ensure equipment is safely switched off where appropriate.
* Make sure the production area is clean, organised and ready for the following morning.
What We’re Looking For
This is an important role within our business, so we are looking for someone with genuine commercial food-production experience.
You will ideally have:
* Previous experience in a commercial kitchen, bakery, sandwich production or food-production environment.
* Previous experience supervising or leading a team.
* Excellent food hygiene knowledge.
* Experience preparing and cooking chicken and other sandwich fillings.
* Experience using commercial ovens and kitchen equipment.
* Strong organisational skills.
* Excellent attention to detail.
* A good understanding of allergen management.
* Experience with food temperature controls and safe food storage.
* A good understanding of stock rotation and waste management.
* The ability to work quickly while maintaining high standards.
* The confidence to manage and motivate a team.
* The confidence to speak up when something isn’t being done correctly.
A recognised Food Hygiene qualification would be an advantage.
