Full job description

Founding Head Baker / Production Lead

A new independent production-led bakery is being developed for South West London, focused on exceptional bread, buns, viennoiserie and coffee.

We are looking for an experienced baker who wants the opportunity to help build the production operation from the beginning — including the opening range, kitchen workflow, equipment, production systems and bakery team.

This is not an immediate-start vacancy. The site search is currently underway, and at this stage we are looking to meet excellent bakers and undertake paid development days with selected candidates. There would be no expectation of leaving current employment until the site and opening timetable are confirmed.

The role will involve:

Developing a focused opening range across sourdough, enriched doughs and viennoiserie
Helping design the production kitchen, workflow and equipment
Establishing recipes, production schedules and quality standards
Recruiting, training and leading a small bakery team
Taking day-to-day responsibility for production and product quality
Developing the range while maintaining consistency and production discipline

We are interested in speaking with Senior Bakers, Assistant Head Bakers and Head Bakers from high-quality artisan bakeries who have the technical ability and ambition to build something from the beginning.

Strong sourdough and viennoiserie experience is highly desirable. Organisation, consistency, production planning and the ability to develop others are as important as creativity.

The ambition is to build a serious production-led neighbourhood bakery using excellent ingredients, proper equipment and a focused range — rather than an oversized menu or café-led operation.

Location: South West London, with the site search focused on Barnes and the surrounding area.

Salary: £50,000–£60,000 per year + performance-related upside.

Timing: Site search underway; opening subject to securing the right premises. Current commitment would be confidential conversations and paid development days with selected candidates.
