ABOUT THE ROLE
The successful candidate would be responsible for overall Management of the Kitvhen Department operations, via 2-3 days per week office-based, and ensuring food service on the remaining 2-3 shifts within the Kitchen. The role will involve: -
Catering Manager duties: -
- Reinforce food hygiene and food safety standards
- Ensure food presentation is upheld
- Uphold Health & safety in the workplace
- Risk assessments
- Stock taking
- Email correspondence (replies and liaising with Management Team, General Enquiries etc).
- Allergy replies/communications with guests
- HACCP sheets and data recording
- Dealing with staff grievances before they get to HR
- In-house maintenance reporting and liaising with outside contractors
- Attending management meetings
- Communicating with other department heads and staff.
- Managing catering logistics
- Menu planning
- Meeting/liaising with suppliers to review pricing and products
- Negotiating bulk deals
- Monitoring costs
- Food order forms – paper and online
- Reporting to accounts
- Staff training
- Communication with Local authorities – E.H.O
- Co-ordinating staff rota – balanced team on shift
- Manage holiday requests
- Ensure Allergy sheets are regularly updated
- Kcals regularly updated
- Date check records
- Staff training files
- Ordering equipment and staff clothing
- Recruiting / C.V. reviews & interviewing alongside HR.
Head Chef duties: -
- Kitchen Shift Leader - Cooking main buffet items (for lunch/evening meals) i.e. lasagne's, pasta dishes, beef dishes, chicken dishes, vegetarian etc. All items are generally cooked on mass, as we are often catering for 300+ hotel guests.
- Monitoring stock levels and placing orders as necessary (orders are generally placed on a daily basis).
- Ensuring and helping to manage a clean/safe working area.
- Supervising a team of 2-6 other staff on any given shift (staffing numbers are subject to hotel guest numbers).
- Candidates must learn how we operate all stations within the kitchen, from Lead Shift (i.e. No. 1 as we call it), to Breakfast Chef, to Buffet Prep, to KP.
REQUIREMENTS
- This is a great opportunity for a an experienced chef with Management experience. A chance to work for an established business and lead our team of experienced kitchen staff, to ensure all of our guests are catered for on a daily basis:
- Fast worker - essential, as we cater for large numbers when the hotels are busy.
- Looking for an honest, hardworking individual.
- Someone who is flexible in terms of working hours preferable.
- Previous kitchen experience essential (must be a competent chef, preferably with experience in 'mass catering' and be able to lead a team).
HOURS:
- FULL-TIME – Shift Work. Normal working week will be 5 days, although 4-6 may be required depending on hotel occupancy. We would expect you to work in the region of 37.5-45 hours per week.
- Due to the nature of the job it will include regular weekend shifts as well as midweek, shifts are generally 6.00am-2.00pm/3.00pm .
- We can consider a 'set work pattern', but this would need to include at least one of the two weekend days.
