Today, Doner Shack is expanding fast, and we’re building a leadership team to match that momentum.

We're looking for an exceptional Assistant Manager to join our team and help lead our exciting new Doner Shack location in the heart of Glasgow on Gordon Street.

We’re looking for a leader who takes pride in running a tight operation.

Someone who:

Leads with confidence, clarity, and consistency
Cares deeply about their crew and holds them to high standards
Is commercially sharp and comfortable owning the numbers
Can move seamlessly between service, strategy, and planning
Never settles for “good enough”
Shares a genuine passion for food, hospitality, and fast-paced environments

You should be as comfortable supporting the kitchen during a busy service as you are reviewing performance.

WHAT YOU’LL BE DOING

As Assistant Manager, you will:

Take full ownership of day-to-day restaurant operations
Lead by example, setting the benchmark for brand standards and values
Recruit, train, coach, and develop a high-performing crew
Drive sales, productivity, and profitability
Manage stock, labour, and financial performance with precision
Ensure full compliance with all legal, food safety, and health & safety requirements
Support your crew across every area of the business
Act as a Doner Shack ambassador within the local community
Work closely with the founders and head office to support ongoing growth
