Purpose
At Drake’s, food quality defines who we are. The Fryer sits at the heart of our product and service - responsible not only for cooking outstanding food but also for leading and coordinating the team that prepares and serves it.
This role ensures that every service runs smoothly, maintaining absolute consistency in food quality, timing, and presentation. The Fryer liaises closely with the Manager and Assistant Fryer to oversee stock usage, maintain quality assurance, and support efficient day-to-day operations.
The position calls for excellent communication and leadership skills, a calm and steady temperament under pressure, and a strong sense of responsibility. The Fryer also plays a key part in mentoring less experienced team members and ensuring that all front and back-of-house operations work together toward the same goal - the exceptional standard Drake’s is known for.

Main Duties
- Coordinate the team at the start of the day to ensure the shop and restaurant are ready to open.
- Lead the team during shift operations, balancing customer needs between restaurant, takeaway, and delivery.
- Conduct handover meetings between the Day Fryer and Night Fryer to communicate stock, quality, and operational updates.
- Coordinate the end-of-day clean-down, ensuring all procedures are correctly completed.
- Lock up the shop securely, checking alarms, lights, appliances, and access points.

- Liaise with the Assistant Fryer to ensure all kitchen storage areas are appropriately stocked.
- Update the menu as needed and communicate any unavailability or stock changes to the team.
- Ensure plating and salad counters are clean, stocked, and ready for service (delegating tasks where appropriate).
- Communicate regularly with Front of House regarding queue times, takeaway orders, and expected delays to maintain smooth service.
