About Three Flames
Three Flames is an award-winning steakhouse in Wakefield, specialising in locally sourced, dry-aged steaks cooked over charcoal. We are known for premium-quality food, strong service standards, and a modern approach to hospitality.
We are now looking for an experienced and confident Executive Head Chef to lead our kitchen team, drive food standards, and bring fresh ideas to the business as we continue to grow.
The Role
We are seeking someone with strong restaurant experience, excellent leadership skills, and a real passion for cooking high-quality food. The ideal candidate must have experience working with charcoal grills and be confident cooking steaks to a high standard.
This role is suited to someone who can take ownership of the kitchen, manage a team, maintain excellent hygiene standards, and help develop the food offering at Three Flames.
Key Responsibilities
- Lead and manage the kitchen team during daily service.
- Oversee preparation and cooking of locally sourced dry-aged steaks, with a strong focus on charcoal grill cooking.
- Maintain consistently high food quality, presentation, and portion control.
- Manage kitchen organisation, cleanliness, and food safety standards.
- Ensure all hygiene records, food safety forms, temperature checks, cleaning schedules, and compliance documents are completed correctly.
- Support menu development and bring strong ideas for new dishes, specials, and improvements.
- Train, motivate, and develop kitchen staff.
- Manage stock control, ordering, waste reduction, and kitchen efficiency.
- Work closely with management to improve operations, service standards, and profitability.
- Maintain a calm, professional, and confident approach during busy services.
Requirements
- Strong experience in a busy restaurant kitchen.
- Previous Head Chef, Sous Chef, or Senior Chef experience preferred.
- Must have charcoal grill experience.
- Strong knowledge of cooking steaks, including different cuts, temperatures, resting, seasoning, and presentation.
- Good understanding of dry-aged meat is highly desirable.
- Strong knowledge of food hygiene, health and safety, and kitchen compliance.
- Confident completing relevant kitchen paperwork and food safety forms.
- Excellent leadership and communication skills.
- Ability to manage a team under pressure.
- Strong organisational skills and attention to detail.
- Creative mindset with the ability to bring new ideas to the business.
