Head Baker Doh is looking for a Head Baker! We are in a period of expansion and are looking for someone to take over the day to day running of the bakery, whilst helping to expand production and bakery systems into this next phase.
Please note that shifts are across the weekend and start at 2am based in Tradeston so please be mindful of this when applying.
We are looking for someone who is confident, has excellent communication and most importantly a passion for doughnuts and baked goods. You must have an excellent grasp of dough making including Brioche and Laminated doughs, including judgement of hydration levels based on external factors such as weather and heat. You will be working directly with the owner as well as a small team of established staff members.
What’s involved
Administration
Working with director on hiring and training of new staff as well as continuing training and development of current staff Compliance with HACCP and EHO requirements and making sure paperwork is up to date, delegating paperwork where required
Stock and orders
Maintaining stock levels and preparing order sheets. Ensuring any day to day purchases required are communicated
Working with the director to ensure margins are adhered to and costing up products Looking across order systems to check daily for orders
Baking
Work with director on oversight of prep list each day
Preparation of fillings and toppings
Working with the team on creation of seasonal menus and weekly specials Ensuring a high standard of products at all times, leading staff in detail and finishing Leading on expansion of product range Cutting, rolling, frying and decoration of doughnuts and ensuring staff members are assigned to each
Packing of doughnuts correctly each morning with the team

What we’re looking for
Excellent communication. We have created a very supportive environment, you must be able to fit into that kind of kitchen environment and be able to work in a small team
Experience of at least 1 year at management or assistant management level in a bakery. If you do not have this please detail in your cover letter why you think you'd be suitable
A passion for dough and maintaining daily standards across products
Knowledge of HACCP and eho requirements Level 2 hygiene Ability to make decision and answer questions from team members
