Purpose of the Restaurant and Bars Manager role
You will be responsible for managing the daily operations of the Restaurants, Bars and Front of House areas, ensuring exceptional service delivery, strong financial performance and a positive guest and team experience. The role includes responsibility for people leadership, commercial performance, events and functions, stock control, systems and compliance, supporting the hotel’s overall brand and standards.
Main Responsibilities
- Review, maintain and improve departmental SOP Manuals for all Food and Beverage areas
- Manage the Restaurants and Bars to the required AA Red Star standard within agreed budgets
- Lead, motivate, recruit, train and develop the Food and Beverage team, ensuring strong performance management and retention
- Create a positive, inclusive and engaging team culture that promotes ownership, accountability and wellbeing
- Ensure exceptional customer care standards are consistently delivered and proactively improved
- Act as a visible and approachable leader within the operation, setting clear expectations and standards
- Be fully up to date with Food and Beverage trends and work with the Head Chef to implement relevant changes
- Maximise yield and revenue opportunities through upselling, service initiatives and effective stock control
- Control departmental costs and manage performance against agreed budgets
- Set, monitor and deliver key departmental KPIs including labour percentage, beverage margins, stock variance and guest satisfaction scores
- Use performance data and management information to identify trends and implement corrective actions
- Complete weekly rotas in line with staffing budgets and business demand, ensuring effective deployment of resources
- Complete monthly liquor stocktakes and regular bar stocktakes, providing accurate reporting and feedback
- Place all liquor and beverage orders with suppliers, ensuring best value and effective supplier relationships
- Ensure all mise-en-place and service preparation is completed to the required standard for each shift
- Ensure all Restaurants, Bars and Front of House areas are clean, safe, well presented and welcoming
- Ensure accurate daily cash reconciliations and adherence to correct billing, posting and banking procedures
- Act as the main point of contact for guest queries and complaints, ensuring prompt resolution and service recovery where appropriate
- Identify guest needs proactively and respond in a professional and solution-focused manner
- Ensure up-to-date information regarding functions and events is communicated clearly and effectively to the team
- Support the forward planning, organisation and delivery of events, weddings and special functions
- Co-ordinate Food and Beverage staff to ensure seamless service delivery and teamwork across departments
- Ensure faults and defects are reported to Maintenance and followed up without delay
- Work closely with Accounts and Sales, acting on feedback and implementing agreed corrective procedures
- Support responsible and sustainable working practices, including waste reduction and efficient use of resources
- Hold regular departmental meetings to ensure standards, objectives and priorities are clearly understood
- Complete regular job chats, appraisals and development plans for all team members
- Hold regular meetings with the Head Chef regarding menus, events and Food and Beverage strategy
Other Responsibilities
- Carry out Duty Management shifts as required
- Run and oversee functions, weddings and special events as required
- Ensure staff are correctly presented and in uniform at all times
- Maintain hygiene and food safety standards in all areas of responsibility
- Support other departments to ensure a smooth and efficient hotel operation
- Ensure all transactions are accurately billed and all monies received
- Ensure beverage transfers, wastage and variances are recorded and investigated
- Assist in managing aged debtors where required
- Support revenue growth through proactive guest engagement and service standards
- Recruit, select and train direct reports, maintaining individual training records
- Oversee ongoing training and development of the Food and Beverage team
- Support wider departmental and hotel training initiatives where appropriate
- Provide clear pathways for personal and team development
Pay: £39,141.60 per year
